Every year I wait anxiously for the mango season to come to make this yummilicious cake for my family and friends. And today I am going to share a healthy mango cake recipe Mango Semolina Cake which is one of my favourite and also liked and tried by many.
Mango Semolina Cake is a very easy and fuss free recipe and it’s vegan. Mango semolina cake is made using mango puree and semolina aka suji/rawa. I have used Alphanso mango to make this recipe.
The texture and flavour of the cake is amazing. The cake is delicious, soft, moist and it tastes super yummy with beautiful mango flavour. The cake looks very tempting and is very simple and spongy.

☆ Measuring cup used is 240 ml
Ingredients to make mango semolina cake:
- 1 cup Semolina/Suji/Rawa
- 1¼ cup Mango puree (2 medium sized mangoes)
- ½ cup Sugar
- ¼ cup Oil
- ½ tsp Baking Soda
- ½ tsp Baking powder
- ½ tsp Vanilla essence
- 2 tbsps chopped nuts (Almond, cashewnuts and pistachios)
Step by step pictures instructions on how to make mango semolina cake:
Peel the mango skin, cut them into cubes. Add the mango and sugar in a grinder or blender and blend them into a fine puree.
In a mixing bowl add the semolina, baking powder, baking soda, mango puree.
Gently mix them well and make a smooth batter. Let it stand for 10-15 mins.
Add oil and vanilla essence and gently fold them.
Preheat oven @180° for 10 mins. Grease a cake pan with oil.
Pour the batter into the greased pan and tab the pan 2-3 times to release the air bubbles. Garnish with chopped nuts.
Bake the cake for 30-35 mins. A tooth pick inserted should come out clean. Remove from the oven, let it stand 5 mins, demould the cake, cut and serve.
Notes :
- I have used roasted semolina. If your store bought semolina is not roasted you can slightly roast them or can use Just like that.
- You can add sugar depending upon the sweetness of your mango and your taste buds.
- Using vanilla essence is optional.
- Baking time will differ depending upon the oven temperature, mine took 35 mins. Start checking from 30 mins onwards.

I made this today & looks yummy but when u actually take a bite u have a bites with raw or uncooked Sooji as if it’s not soaked properly

Hi Asha.. hope you have soaked for 10-15 minutes after mixing the semolina.. the variety of semolina also matters.. you can try pulsing the semolina in mixie or blender for few seconds and then use them.. while soaking if you feel the batter is too thick you may add some more mango puree.
