INGREDIENTS TO MAKE DOUBLE CHOCOLATE BANANA WALNUT CAKE

HERE’S A STEP BY STEP PICTORIAL INSTRUCTIONS TO MAKE DOUBLE CHOCOLATE BANANA WALNUT CAKE

Preheat oven to 180° C for 10 minutes with both rods on.
Grease cake tin and line with parchment paper.

Prepared cake tin

Coat the chocolate chunks and walnuts with little flour. Keep aside.

Flour coated chocolate and walnuts

In a mixing bowl add in the milk and vinegar. Mix well and keep aside for 5 minutes. (Your buttermilk is ready).

Making buttermilk

Add in the mashed banana, oil, brown sugar and vanilla extract. Mix well until well combined.

Wet ingredients

Seive in the flour, cocoa powder, baking powder, baking soda and salt. Sift them together.

Gently fold the mixture and make a smooth lumps free batter.

Mixing dry ingredients

Add in the flour coated chocolate chunks and walnuts. Gently give a quick mix. Do not overmix at this stage.

Pour the batter onto the prepared pan and tap the pan to release any air bubbles trap inside.

Sprinkle the chocolate chunks and chopped walnuts all over the cake.

Bake the cake at a preheated oven @180° C for 40-45 minutes or until a toothpick inserted comes out clean.

Baking the cake

Remove the cake from the oven and allow to stand for 5 minutes.

Demould the cake from the pan and allow the cake to cool down completely.

Slice and enjoy!

NOTES / TIPS & TRICKS

● All ingredients should be at room temperature .
● Always bake at preheated oven.
● You can use all purpose flour or 50-50 ratio of all purpose flour and whole wheat flour.
● Make sure you use quality cocoa powder and chocolate.

● Use larger chocolate chunks, as they don’t fully melt when baked and you can feel the crunch when you bite into it.
● You can also use coconut oil, vegetable oil or canola oil.
● You can also use 50-50 ratio of oil and butter.
● You can also add other nuts of your choice.
● You can also add a dash of cinnamon powder if you like.
● Do not allow the cake to cool down completely from the cake tin. Once out of oven allow to stand in the cake tin for 5 minutes and then demould and transfer to a rack or platter and allow to cool down completely.

Ingredients
  

  • cup Whole wheat flour (192 grams)
  • 30 Grams Cocoa powder (¼ cup)
  • Teaspoon Baking powder
  • 1 Teaspoon Baking soda
  • ¼ Teaspoon Salt
  • 150 ml Whole milk (⅔ cup)
  • 2 Teaspoon Vinegar or lemon juice (10 ml)
  • 150 Grams Mash ripe banana (2 large ripe banana)
  • 150 Grams Brown sugar (¾ cup)
  • 90 ml Oil (⅓ cup)
  • 1 Teaspoon Vanilla extract (5 ml)
  • 50 Grams Dark chocolate chunks
  • 50 Grams Walnut Chopped

For Topping

  • 20 Grams Dark chocolate chunks
  • 20 Grams Walnut chopped

Instructions

    50 Grams Dark chocolate chunks, 50 Grams Walnut

    150 ml Whole milk, 2 Teaspoon Vinegar or lemon juice
  • Add in the mashed banana, oil, brown sugar and vanilla extract. Mix well until well combined. 
    150 Grams Mash ripe banana, 150 Grams Brown sugar, 90 ml Oil, 1 Teaspoon Vanilla extract
  • Seive in the flour, cocoa powder, baking powder, baking soda and salt. Sift them together. 
    1½ cup Whole wheat flour, 30 Grams Cocoa powder, 1½ Teaspoon Baking powder, 1 Teaspoon Baking soda, ¼ Teaspoon Salt
