A basic sooji halwa recipe with step by step pictures. Sooji ka halwa is a classic Indian semolina pudding cooked with ghee (clarified butter), nuts, raisins and flavored with cardamom.

Sooji ka halwa is a quick, easy and delicious halwa made in almost all the Indian household. One of the quickest and easiest Indian sweet recipe to make when yoi wish to have something sweet.

It is also called by different names in different parts of India. In South it is called as rava kesari and in some parts Rava sheera But the preparation is almost all the same with semolina as the main ingredient. Few people use water instead of milk in the recipe. Some use saffron for the colour and flavor.

Sooji ka halwa is often made in auspicious occasion like poojas and festivals. It is a made as an offering or prasad for the pooja. It can also be made any day any time of the year. You dont require a reason or occasion to make this sooji ka halwa. Just when you feel like having something sweet you can instantly make it and enjoy the sweet indulgence. I loved to have this sooji ka halwa with chai/tea.

It is also made on the 8th/9th day of Navratri festival and served with kala chana (chickpea)and poori (fried Indian flat bread) as prasad in Kanjak Pooja. Kanjak pooja is a ritual where young girls under the age group of 9 are worshipped as an embodiment of Godess Durga. This marks the end of the fasting.

  • Preparation time : 5 mins
  • Cooking time : 25-30 mins
  • Serves : 4-5

Ingredients :

  • 1 cup Sooji / Semolina
  • 1 cup Sugar
  • 4 cups Water
  • 1/2 cup + 1 tbsp Ghee
  • 1/4 tsp Cardamom powder
  • 1 tbsp Raisin
  • 2 tbsp Almond and cashew chopped

Method :

In a pan add ghee and sooji and roast the sooji stirring it continuously for even roasting till it turns light brown.

In a pot add water, sugar, cardamom powder and bring it to a boil and let the sugar dissolve completely. Turn off and keep aside.

In a sauce pan add the 1 tbsp ghee and first roast the almond and cashew for few mins. Then add the raisin and roast for few seconds and removed from heat.

Now pour the sugar syrup over the roasted sooji. Make sure that the flame is low while pouring the sugar syrup and be careful not to hurt yourself.

Increase the heat and stir the mixture continuously so that lumps do not form. Slowly you will notice that the sooji has absorb all the sugar syrup.

Add the roasted nuts and raisins reserving few for garnish, mix well and continue to cook for couple of mins till the halwa has left the sides.

Your sooji ka halwa is ready. Garnish with the remaining roasted nuts and raisins and serve.
