Eggless Malai Cake is a pretty popular Indian cake. It is a soft, spongy, slightly dense and moist cake made with all purpose flour and fresh cream which we Indians called it as malai. It is an egg free and butter free cake.

Eggless malai cake is really an easy and simple cake recipe which you can easily make at home with simple equipments and techniques. It does not require any expertise which makes it a perfect beginner’s cake.

This malai cake is an all rounder cake. It is a delicious tea time cake, can be had in breakfast, great for kids tiffin box or after school snacking. It can also be enjoyed for a quick snack.

INGREDIENTS USED TO MAKE EGGLESS MALAI CAKE

Eggless malai cake is made with a handful of basic ingredients. This recipe doesn’t call for any fancy ingredients. The ingredients are basic ingredients which we used for making any cake and which are readily available in our pantry or store.

The ingredients used to make this cake are all purpose flour, cornflour, malai aka fresh cream, baking powder, baking soda, oil, milk, vanilla extract and a pinch of salt. One can used homemade malai that is cream extracted from fresh milk. If you dont have homemade malai you can use store bought fresh cream to make this malai cake.

HOW TO MAKE EGGLESS MALAI CAKE?

Start by preheating the oven @180° C for 10 minutes and greasing the cake pan with oil or butter. Gather the ingredients at room temperature. It is very important to use all ingredients at room temperature. Sieve the dry ingredients for 2-3 times. Next cream the sugar and malai using a hand whisk till sugar melts and creamy mixture is attained. Add oil and vanilla extract and mix well. Than simply add the dry ingredients to the wet ingredients and fold the batter. Gradually add the milk and make a smooth running the batter using cut and fold method. Pour the batter into the greased pan and bake at preheated oven for 35 minutes until a toothpick or skewer inserted comes out clean. Your golden beauties are ready to be devoured. So delicious it is!

VARIATIONS AND SUBSTITUTES FOR THIS RECIPE

If you looking to make this cake more healthier you can use whole wheat flour instead of all purpose flour. Like wise refined sugar can be replaced with any healthy sweeteners of your choice. I mostly use brown sugar or cane sugar. Oil can be replaced with butter.

You can add cardamom powder to give a beautiful flavor to the cake and garnish the cake with chopped pistachios or with tutti frutti or nuts and dry fruits of your choice. This gives the cake a beautiful flavor and does make it look beautiful.
I have kept the flavour plain without any garnishes as my little one doesn’t like cardamom flavor and garnishes.

Ingredients to make eggless malai cake:

1 cup All purpose flour / Maida ( minus 2 tbsp)
2 tbsp Cornflour
2 tbsp Milk powder ( optional)
½ cup malai / fresh cream
½ cup sugar
¼ cup oil
â…” cup milk
1 tsp baking powder
½ tsp baking soda
1 tsp vanilla extract
¼ tsp salt

Step by step instructions to make eggless malai cake / eggless fresh cream cake:

Preheat oven @180° C for 10 minutes. Grease a cake pan and set aside.

Gather all the ingredients at room temperature.

Sieve the flours, baking powder, baking soda, milk powder, salt for 2-3 times and side aside.

In a mixing bowl add the malai/fresh cream, sugar and whisk till sugar dissolves and the mixture turns creamy.

Add oil, vanilla extract and mix well.

Now add the flour mixture to it and gently fold the batter.

Add the milk gradually and make a smooth running batter.

Pour the batter into the greased pan. Make sure to tap the cake tin on the worktop to remove any air bubbles.

Bake at preheated oven @180°C for 35 minutes. A toothpick inserted should come out clean.

Remove the cake from the oven and let it stand for about 5 minutes. Invert and let it cool down completely. Cut and serve.
