INGREDIENTS TO MAKE EGGLESS BANANA WALNUT BROWNIES

This section explains what all ingredients is used in making the eggless banana walnut brownis, how to use or choose certain ingredients and substitution options. For measurements, see the recipe card below.

OATS – The recipe uses rolled oats and grind them into powder.

COCOA POWDER – Non sweetened cocoa power is used. We used Hershey’s cocoa powder in the recipe.

CHOCOLATE – Dark chocolate is used here. You can also used milk chocolate. We added chocolate chunks instead of melted chocolate. Using good quality cocoa powder and chocolate ensures that you get the best results.

COFFEE – The recipe uses instant coffee granules. You can skip it too.

BANANA – Over ripe bananas are used here. For best and full flavor I recommend using over ripe bananas, they are best to use in baking.

WALNUT – Unroasted walnut is used here. You can also use roasted one.

CURD/YOGURT – Thick curd is used. Use fresh curd to avoid sourness. If your curd is not thick, place them in a muslin cloth to drain the water or drain them in a sieve.

SUGAR – Cane sugar is used here. You can also use jaggery or brown sugar if you’re looking for a other healthier sweetener or else you can swap it with white sugar.

BUTTER – Unsalted butter is used here. Butter is used in a melted form.

OIL –  Sunflower refined oil is used here. You can used any neutral flavor oil.

SALT – A dash of salt is used to balance the sweetness and enhance the taste.

ESSENCE – Vanilla essence is used here. You can also use vanilla extract or chocolate essence.

HOW TO MAKE EGGLESS BANANA WALNUT BROWNIES

STEP BY STEP PICTORIAL INSTRUCTIONS TO MAKE EGGLESS BANANA WALNUT BROWNIES.

Preheat your oven to 180°C (350°F) and line a baking tin with parchment paper or simply grease it and dust some flour.

Baking tin

In a mixie or blender grind the oats into a fine powder.

Oats flour

Peel the bananas, mash them using a fork and transfer to a mixing bowl.

Add in curd, sugar, butter, oil, vanilla essence and salt. Mix until combined.

Wet ingredients

Add in your oat flour, cocoa powder, coffee and mix until well combined.

Add in chopped chocolate and walnuts. Fold them gently (reserve some for garnish).

Transfer the batter onto the prepared baking tin and tap the tin to release any air bubbles.

Sprinkle the reserved chocolate and walnuts.

Bake them at a preheated oven at 180° C for 25 to 30 minutes.

Allow to rest in the pan for 5 minutes and then remove from the pan and allow brownies to cool completely.

Cut into squares and serve as per your preference.

* All ingredients should be at room temperature.
* Always bake at preheated oven.
* You can use all purpose flour or whole wheat flour instead of oats.
* Use good quality cocoa powder and chocolate.
* Use over ripe bananas for best result.
* You can use chocolate chips or even use melted chocolate.
* You can bake with 100 g butter or ¼ cup oil or use a mixture of both as I did.
* Adding coffee is optional.
*Do not allow the cake to cool down completely from the cake tin. Once out of oven allow to stand in the cake tin for 5 minutes and then demould and transfer to a rack or platter and allow to cool down completely.

  • 100 Grams Oats (1 cup)
  • 2 Large Ripe banana (½ cup mashed)
  • 120 Grams Curd / Yogurt (½ cup)
  • 100 Grams Cane sugar / brown sugar (½ cup)
  • 50 Grams Butter melted (3-4 tablespoon)
  • 2 Tablespoon Oil (30 ml)
  • 1 Teaspoon Vanilla essence
  • ¼ Teaspoon Salt
  • 30 Grams Cocoa powder (4 tablespoon)
  • 1 Teaspoon Instant coffee
  • 150 Grams Chocolate (chopped into chunks)
  • 70 Grams Walnut Chopped

Instructions

STORAGE INSTRUCTIONS

The brownies can be stored in an airtight container or wrapped in a cling film at room temperature for about 3-4 days. If you store in refrigerator its shelf life will last for more than 1 week.

You can also freeze these brownies to enjoy it later. Let the brownies cool down completely. Slice them and cling wrap the individual slices. Store in an airtight container and freeze them for up to 2-3 months. Thaw the brownies ahead of serving. You can microwave them for few seconds if you prefer them warm.

SERVING INSTRUCTIONS

You can have these gluten free brownies for breakfast or as snacks to kill your hunger pangs. You can even serve it as a dessert with a scoop of ice cream, a dollop of whipped cream, with your favourite frosting or sauce.
