Mocha Banana Chocolate Chip Muffins

An ultra soft and fluffy mocha banana chocolate chip muffins for an indulgent breakfast or sweet treat! Easy to make with very basic baking ingredients and a one bowl recipe.

These mocha banana chocolate chip muffins is eggless recipe and are made with whole wheat flour, brown sugar, over ripe banana, instant coffee and chocolate chips making them the perfect recipe to start your day with. They make the perfect on-the-go breakfast, snack, or dessert.

Its weekened and since I had some over ripe bananas I have to make use of it. So what better way to make use of over ripe banana by baking something which is ridiculously delicious. I made banana mocha chocolate chip muffins, and they were wonderful. You just can’t stop with one!

Anyone else a fan of ways to use up bananas? I always buy them a little more, and this is one of the reasons why!

These banana mocha chocolate chip muffins are absolutely loaded with flavor and insanely delicious. The aroma that was lingering in my house while baking these muffins was heavenly. Yes, it really was!

These muffins are very easy to make and it requires very basic baking ingredients which we already have in our pantry. Most importantly, it’s a one bowl recipe, mix all the ingredients in a mixing bowl, scoop into muffin cups and bake to perfection.

Banana mocha chocolate chip muffin tastes so delicious and has perfect texture that you won’t miss eggs in it. This recipe is a keeper and I bet you gonna end up making this over again!

WHAT YOU’LL NEED TO MAKE MOCHA BANANA CHOCOLATE CHIP MUFFINS

● Flour – Whole wheat flour
● Leavening agents – baking powder and baking soda
● Salt
● Flavor – Ossoro french vanilla essence
● Sweetner – fine brown sugar
● Fats – flavorless oil
● Liquid – Full fat milk
● Coffee – Instant coffee powder
● Chocolate chips – Medium semi-sweet chocolate chips
● Banana – Sweet over ripe bananas
● Vinegar

INGREDIENT SUBSTITUTION

● Use all purpose flour instead of whole wheat flour or use 50:50 ratio of all purpose flour and whole wheat flour.
● Brown sugar can be substituted with granulated sugar or jaggery or cane sugar.
● You can use butter instead of oil.
● If you can get your hands on espresso powder, you can substitute it with instant coffee powder.
● You can use chocolate chunks instead of chocolate chips.
● You can use 1 egg and opt out the vinegar
● Can use buttermilk or yogurt instead of milk
● Ossoro french vanilla essence can be substituted wit any vanilla essence or extract.
● You can use lemon juice instead of vinegar.

SHELF LIFE OF MOCHA BANANA CHOCOLATE CHIP MUFFINS

These muffins stays good for atleast 3 days in room temperature. If refrigerated in airtight container it will stay good for atleast 1 week. These muffins can be easily freezed and store in freezer for atleast 3 months.

HOW TO MAKE MOCHA BANANA CHOCOLATE CHIP MUFFINS

Here are the step by step method to make these delicious banana mocha chocolate chip muffins.

Preheat oven @180° C for 10 minutes. Line the muffin tray with liners. If you dont have liners just grease the tray with butter or oil.

In a mixing bowl place the sift and add in the flour, baking powder, baking soda, coffee powder and salt. Sieve them together.

To the dry ingredients mixture add in the brown sugar, vanilla essence, oil, milk, mash banana and vinegar.

Fold the mixture together and make a batter.

Take the chocolate chips and coat it in little flour. This will prevent the chocolate chips from sinking at the bottom.

Add in the chocolate chips into the batter and give a quick gentle mix. Do not over mix them.

Scoop the batter into the lined muffin tray till ¾th of the cavity.

Tap the muffin tray for 2-3 times to level it and release any air bubbles inside.

Sprinkle some chocolate chips over the muffins.

Bake at a preheated oven @180° C for 20 minutes. A toothpick or skewer inserted should come out clean. (I bake with both the filaments on).

Baking time will differ depending upon your oven temperature settings because each oven reacts differently.

Remove from the oven and transfer onto a cooling rack and allow to cool down completely before serving.

  • 1 cup (130 grams) whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ tsp salt
  • 2 teaspoon instant coffee powder or espresso powder
  • ½ cup (135 grams) ripe mash banana
  • ½ cup (90 grams) brown sugar
  • ¼ cup (60 ml) oil
  • ½ cup (120 ml) whole milk
  • 1 teaspoon vinegar
  • ¼ teaspoon Ossoro french vanilla essence (vanilla essence)
  • ½ cup (85 grams) chocolate chips

Instructions
