Mutton tawa dry roast (mutton roast) is an easy mutton roast recipe which is prepared with limited ingredients and is ready under 30 minutes. It is mildly spicy, roasted well from outside and tender juicy from inside.

A delicious tawa roast mutton recipe with tender goat meat. The meat is pressure-cooked with curd, ginger garlic paste and spice powders. It is then roasted in ghee (clarified butter) until golden brown. No onion and tomato is used in the recipe.
This mutton dry roast can be served as an appetizer/starter. This is also great as a side dish to be served with your meal.
Mutton is one of our family favourite. This is my version of making a easy and quick mutton roast. I make the same recipe with mutton chops which is also an absolute hit. This recipe is a saver when you are in a hurry or even when you are don’t want to do an elaborate cooking.

Mutton tawa dry roast is easy to cook, tasty and a great dish to satisfy non-veg craving which the family will come back for more. This dry roast can be prepared with boneless mutton if you’re planning to serve as an appetizer. However it can be made with bone-in meat also. Both tastes absolutely delicious and lip-smacking good.
In this recipe we have used readymade masala spices. It’s no doubt freshly grinded whole spices gives gives the dish a unique flavour and aroma. But since I am making a quick, simple and easy mutton dry roast, I have used readymade masala
If you’re using whole spices, dry roast all the spices on low flame until it starts to crackle and becomes aromatic. Then grind them into fine powder and use them in the recipe.

INGREDIENTS FOR MAKING MUTTON TAWA DRY ROAST

MUTTON – The recipe uses boneless mutton. Choose tender mutton which will be perfect for mutton dry roast.
CURD – Thick curd aka yogurt is used. The curd tenderized the mutton.
SPICES – A blend of spice powders is used in the recipe – turmeric powder, red chilli powder, cumin powder, coriander powder, pepper powder, garam masala powder.
GINGER GARLIC – Freshly ground ginger garlic is used here. You can use readymade store bought ginger garlic paste.
SALT as per taste
WATER as required

MUTTON TAWA DRY ROAST VIDEO TUTORIAL
STEP BY STEP PICTORIAL INSTRUCTIONS TO MAKE MUTTON TAWA DRY ROAST
Wash the mutton and squeeze off the water nicely. Cut them into medium size cubes or pieces.

In a pressure cooker add in the mutton cubes, curd, turmeric powder, red chilly powder, cumin powder, coriander powder, pepper powder, ½ tsp garam masala powder, salt and water. Mix well to combine.

Put on the pressure cooker lid and pressure cook for 6-7 whistles or cook based on the tenderness of the meat.
Let the pressure release naturally on its own.
Open the cooker and cook the mutton on high flame until the water evaporates completely.

In a tawa add in the ghee and allow to melt. Simmer the flame and add in the mutton pieces.
Roast on low-medium heat on all sides turning sides. Stir ccasionally at regular intervals for even roasting.
Roast the mutton for about 10 minutes until golden and roasted well.
Lastly add in the remaining garam masala powder, mix well and cook for 1-2 minutes and take off the heat.
You can sprinkle chopped coriander leaves and serve.


NOTES /TIPS:
● Try to use tender meat so that it cooks faster and you get a tender meat.
● Presssure cook the meat based on the tenderness of the meat. Cooking time will vary depending upon the meat.
● Ghee can be swap with other cooking oil like sunflower, vegetable or coconut oil.
● You can use whole spices as well.

- 2 Tablespoon Gher (Clarified butter)
- ⅓ Cup Curd / yogurt (120 grams)
- 1 Teaspoon Turmeric powder
- 1 Tablespoon Red chilli powder
- 1 Teaspoon Cumin powder
- 1 Tablespoon Coriander powder
- 1 Teaspoon Pepper powder
- ½+½ Teaspoon Garam masala powder
- 2 Teaspoon Ginger garlic paste
- Salt to taste
- 100 ml Water
Instructions

STORING & SERVING SUGGESTION
Serve it as an appetizer or starter. You can also serve it with rice, biryani, roti, phulka or even idli dosa as a.side dish.
This mutton tawa dry roast keeps well in room temperature for a day and in fridge for 2-3 days. If storing in fridge reheat by adding little water and then serve it.
