Eggless Malai Cake

Eggless Malai Cake is a pretty popular Indian cake. It is a soft, spongy, slightly dense and moist cake made with all purpose flour and fresh cream which we Indians called it as malai. It is an egg free and butter free cake.

Ingredients
  

  • 1 Cup All purpose flour (minus 2 tablespoon)
  • 2 Tablespoon Cornstarch (cornflour)
  • 2 Tablespoon Milk powder or dairy whitener
  • ½ Cup Malai or fresh cream
  • ½ Cup Sugar (100 g)
  • ¼ Cup Oil (60 ml)
  • Cup Milk (160 ml)
  • 1 Teaspoon Baking powder
  • ½ Teaspoon Baking soda
  • 1 Teaspoon Vanilla essence
  • ¼ Teaspoon Salt

Instructions
 

  • Preheat oven @180° C for 10 minutes. Grease a cake pan and set aside.
  • Gather all the ingredients at room temperature.
  • Sieve the flours, baking powder, baking soda, milk powder, salt for 2-3 times and side aside.
  • In a mixing bowl add the malai/fresh cream, sugar and whisk till sugar dissolves and the mixture turns creamy.
  • Add oil, vanilla extract and mix well.
  • Now add the flour mixture to it and gently fold the batter.
  • Add the milk gradually and make a smooth running batter.
  • Pour the batter into the greased pan. Make sure to tap the cake tin on the worktop to remove any air bubbles.
  • Bake at preheated oven @180°C for 30 to 35 minutes. A toothpick inserted should come out clean.
  • Remove the cake from the oven and let it stand for about 5 minutes. Invert and let it cool down completely. Cut and serve.

Notes

  1. All ingredients should be at room temperature.
  2. Sieve the flour 2-3 times, this helps in getting a nice texture to the cake.
  3. You may increase the sugar to 1 cup if you prefer more sweet cake.
  4. You may replace all purpose flour with whole wheat flour for more healthier version.
  5. You may substitute oil with melted butter or melted ghee.
  6. You can add a light amount of cardamom powder to give a beautiful flavor to the cake.
  7. You can garnish the cake with chopped pistachios or with tutti frutti or nuts and dry fruits of your choice.
  8. Each oven reacts differently so baking time may differ since the temperature varies from oven to oven. Keep a check from 30 minutes onwards.
  9. Do not open the oven frequently to check the cake while baking is in process.
