Peri Peri Chicken With Veggie Salad



A quick and easy Peri Peri Chicken from my kitchen. This is my version and prepared with homemade peri peri sauce/marinade. If you love spicy chicken than this is a must try recipe.

The word Peri Peri comes from the Swahili word Pili Pili which stands for pepper/spicy chilli. It is a spicy dish with roots in both Africa and Portugal.

This delicious, moist and succulent chicken has a spicy marinade. The peri peri sauce is made from scratch all at home. You can increase the chillies to make it more hot hot and hot 😜😜. You can also use the ready made store bought peri peri powder or sauce if you can’t made the marinade at home.

I have made this in microwave in microwave cooking mode. You can bake/grill it or if you don’t have a oven you can do it in a pan over the gas top.

This lipsmacking, juicy, tender and tasty chicken is being served with fresh veggie salad with the awesome crunch coming out of the fresh veggies. You can even serve it with french fries, tossed veggies or grilled veggies.

Peri Peri Chicken is very close to my heart for few reasons. It is one of my favourite dish, loved by my families, loved by most people whenever i shared this recipe and most importantly this is one of my winning recipe.

Preparation Time : 1 hr 15 mins
Cooking Time : 20-25 mins
Serves : 3

Ingredients to make peri peri chicken:

Chicken Drumsticks – 500 gms
Red Capsicum – 1 chopped
Red Bird Eye Chilli – 5
Garlic – 5 cloves
Red Chilli Powder or Paprika – 2 tbsp
Black Pepper Powder – 1 tbsp
Vinegar – 2 tbsp
Oregano – 1 tbsp
Salt to taste
Oil – Β½ cup

How to make peri peri chicken in microwave mode:

Take the chicken and make slashes on both sides. Pat them dry with kitchen towel and keep aside.

In a blender take all the ingredients except chicken and blend it into a fine paste.

Pour the paste over the chicken and mix well. Rub the paste all over the chicken nicely and marinate them for atleast 1 hour.

The longer marination the better.

In a grill tray lay the chicken in single layer. Microwave in combination mode (microwave+grill) for 20-25 mins.

Turn them over midway every 5 mins. Rub the chicken with the left over paste in between the cooking.

Take it out and serve it with the salad.

How to make peri peri chicken in Oven (OTG):

Preheat oven to 180Β°C. In a grill tray lay the chicken in single layer and grill them for 20 mins basting the chicken with the leftover marinade in between the cooking.

Turn them over midway every 5 mis. After 20 mins increase the temperature to 200Β°C and grill them for 5 mins each on both sides.
