Spiced Fried Chicken 

And my experiment with food and ingredients continues. There is a small story behind how I came up with this dish. I was given a chance to choice a spice blend from amongst 4 spice blend from a brand Sprig by a recipe app and create a dish using the spice blend. So I have choosen Genoa Spice Blend and created this dish using the spice blend. 

Sprig Genoa Spice Blend 

This Spiced Fried Chicken is succulent, soft and juicy. It is crunchy and crisp from outside and so juicy from inside with the goodness of the flavour coming out of the spice blend. 

Here the chicken is brined in milk, egg, spice mixture for couple of minutes. Then it is coated in flour, crushed cornflakes and spice mixture and deep fried to perfection. The End result is lip smacking and succulent fried chicken and it taste much better than the store bought ones.

  • Preparation time :30 minutes 
  • Cooking time :12-15 minutes 
  • Serves :2


  • Chicken Drumsticks – 2 large
  • Sprig Genoa spice blend – 2 tbsp 
  • Cornflakes crushed – ¼ cup
  • All Purpose Flour – ¼ cup
  • Egg – 1
  • Milk – ½ cup
  • Chilly flakes – 1 tbsp or as per your taste
  • Salt to taste 
  • Oil for deep frying 

Note: You can also use pepper as per your taste. 


    Wash the chicken and pat dry with kitchen towel and make slashes on it. 

    Take the milk in a bowl and add ½ tbsp of sprig genoa spice blend. 

    Break the egg and add to the milk mixture.

    Whisk well, season with salt and add the chicken drumsticks to it and marinate it for atleast 30 mins. 

    In a plate add the crushed cornflakes, all purpose flour and remaining sprig genoa spice blend. 

    Add the chilly flakes and season the salt. 

    Mix them well together. 

    Take out the chicken from the mixture and coat them well in the mixture. 

    Heat oil in a pan. When the oil is hot, simmer the flame and add the chicken drumsticks and fry them in low-medium heat. 

    Flip over and fry them for about 12-15 mins or till the chicken is crisp and brown.

    Take it out in an absorbent paper. Plate it, sprinkle some genoa spice blend and serve with french fries or any sauce of your choice.
