Shallow fried king fish is a quick, easy and delicious fish fry made with a handful of basic ingredients which are readily available in our pantry. It is prepared using very minimum oil and shallow fried them instead of deep frying. It makes a great appetizer or a side dish to your meal.

King fish also called as vanjaram in Tamil is an unbeatable fish which is available in South India and very popular fish especially in Tamil Nadu. It comes in different sizes. Smaller to medium sizes and comes in huge size too. In this recipe I have used the large size king fish.

Vanjaram also known by other names like surmai or seer fish is a family favourite fish. It is my husband’s favourite fish and since he is not comfortable eating fish with more bones he always prefer to buy this king fish. This fish has only one centered bone and taste is also unbeatable to other fishes. That’s the reason he loves this fish so much and always prefers to go for king fish.

It is an easy recipe since it can be easily prepared by any beginners and especially bachelors where they dont need to work much on the recipe and yields a lip-smacking and mouthwatering fried fish.

For making this simple and easy fish fry, it is advisable to marinate the fish for a minimum of 30 minutes so that the fish absorbs all the flavours of the masalas and spices nicely. In this recipe I have shallow fried the fish in less oil. You can make in a tawa with minimum oil, pan fry them or can be deep fried in a kadhai or pan. It is a versatile recipe and the recipe and cooking method can be twited as per your preference and comfortability.

To make this Indian style fish fry I have used freshly grounded ginger garlic juice, fresh lemon juice, Kashmiri red chilly powder, turmeric powder and roasted coriander powder. I recommend to use the juice of freshly grounded ginger and garlic and not store bought ginger garlic paste or juice. Even the same with the coriander powder. Dry roast the coriander seeds and grind them in grinder or blender. This elevates the flavour to a different level. The roasted coriander powder reduces the strong smell of the fish and also add aroma and flavour to the fish. Hence you get an aromatic and delectable fried fry.

Serve fish fry as an appetizer with onion rings, slit chillies and lemon slices or as a side dish with your usually meal. It also pairs great with variety rice like jeera rice, ghee rice, coconut rice, lemon rice etc. I love to pair plain rice and rasam with fried fish and it is one of my favourite combo.

Notes:
▪︎Make a smooth paste of the masala first instead of adding the ingredients directly to the fish.
▪︎The oil should be smoking heat.
▪︎ Once the oil is smoking heat, reduce the heat then add the fish.
▪︎Do not over fry the fish as it will make your fish hard.
▪︎You can make variation of this recipe by adding basic masalas like cumin powder, garam masala powder, fish masala, pepper powder, ginger garlic paste etc and use the fish of your choice. For different fish fry recipe check out the links shared below.

Cooking time: 20 minutes
Serves: 3-4

Ingredients to make Vanjaram Meen Fry:

400-500 gms King Fish
1 tbsp Ginger garlic juice
1 tbsp Lemon Juice
2 tbsp Kashmiri Chilly powder
1 tsp Turmeric powder
1 tbsp roasted coriander powder
Salt to taste
3 tbsps Oil

How to make Vanjaram Meen Fry:

Wash the fish and pat dry with kitchen towel.

In a bowl add all the ingredients except oil and make a smooth paste.

Now rub the masala paste all over the fish and make sure that the fish is coated nicely with the paste.

Marinate the fish for few minutes.(minimum 30 minutes is recommended)

Heat the oil in a pan till smoking hot.

Now reduce the heat and add the fish pieces and shallow fry the fish for 5-6 mins each on both sides in medium heat.

Remove and serve as it is or with onion rings, slit chillies and lemon slices.
