Dohkhlieh is a traditional pork salad of Meghalaya. Authentically it is prepared with pig’s head and brain. It is boiled diced pork, pig’s brain mixed with finely chopped onions, green chillies, ginger and seasonings. It is a meghalayan pork salad and is a traditional recipe from meghalaya.
However I havent used the pig’s brain in this recipe as I couldn’t source it since it is not easily available in cities.
Dohkhlieh is a typical khasi pork dish and everyone has their own style of making it. Originally it is a simple salad recipe prepared with a handful of ingredients. The ingredients in this salad are added or minus according to the availability of the fresh ingredients. Some make this pork salad with only onion and ginger whereas some make with green chilly and onion. Seasonings are added as per ones taste buds.
Dohkhlieh can be said as one of the simplest salad recipe. Nothing can be more awesome to eat which is so easy to make. Yes, this dish of the Khasi’s is that simple. It is just boiled pork (head part) pieces, onion, green chillies and ginger. However I have added two extra ingredients i.e. coriander leaves and homemade chilly flakes. I have added coriander leaves to add some freshness and homemade chilly flakes to add some colour to the salad. You can add tomatoes and vegetables to the salad to give a fusion touch and to make it more wholesome meal.

Let’s briefly see how to make the meghalayan pork salad. Pressure cook the pork pieces. The pork meat should be a mixture of meat and fats. The proportion depends completely on one choice since some like lesser fats and some would love to go for more fats just like me. You can either cook it in big chunks or chopped in small pieces. If you are cooked chunks then you need to chopped them into small pieces once it is cooked. Let there be no moisture to the pork pieces. Next add chopped onions, green chillies, ginger, salt as per taste and mix them well together. Dohkhlieh is ready to enlighten your plate.
Bhut jolokia aka ghost chilly lovers can add a dash of chopped fresh bhut jolokia if available or can even used the dried ones. If you have king chilly sauce you can add a dash of it to the salad, it elevates the flavors and aroma and adds a nice kick to the salad. Also naga raja mircha chutney is a good pair to this salad. Try adding a dash of raja mircha pickle for making variation and added flavors.

I finished half of the salad as it is. The left over I savoured it with king chillies slurry added to it. Lets see how I made the raja mircha slurry. Take little hot water in a small bowl. To the hot water add the one dried king chilly, cover the bowl and set aside for few minutes. The dried king chilly will turn soft once it is soaked in hot water. Now add little salt to it and mash it with a pestle. Your king chilly slurry is ready. Add the slurry as per your taste, mix well and enjoy it as a hot salad.

Notes:
▪︎For the pork meat use a mixture of both meat and fats part.
▪︎ You can cook the pork in a pot or pan instead of pressure cooker.
▪︎I used large variety of chillies so the quantity can be adjusted as per your heat preference.
▪︎ You can add a dash of chopped or crushed bhut jolokia.
▪︎ You can season the salad with crushed black peppercorns.

Serves: 3
Ingredients to make Dohkhlieh:
300 gms Fresh Pork with fats
2 medium onions
1½- 2 inches Ginger
6-7 Green chillies
Salt to taste
½ cup water
Few chopped coriander leaves (optional)
1 tbsp Chilly flakes (optional)
How to make Dohkhlieh:
Cut the pork into medium size pieces. In a pressure cooker add at the pork pieces, water, salt to taste and pressure cook for 5-6 whistles or till the pork is tender.
Let the pressure release naturally. Take out the pork pieces in a bowl and keep aside to get rid of moisture.
Finely chop the onions, green chillies, ginger, coriander leaves and set aside.
Now chopped the pork into small pieces and add them to a bowl.
Add the chopped onions, green chillies, ginger, coriander leaves, chilly flakes, salt into the pork pieces.
Mix them well using your hand and your meghalayan pork salad is ready to be serve.
Serve it along with your meals or as an appetizer.
