Sweet Lime Cake / Mosambi Cake

Mosambi cake or sweet lime cake has the goodness of freshly squeezed sweet limes juice with glaze. The cake is so soft, moist and spongy. This sweet lime cake is too easy to make that even a beginner in baking can nail it perfectly. This is a tea cake so apt for a light snack with a cup of coffee or as a snack in between the meals.

To celebrate this day, I baked a simple yet a unique cake, not a fancy cake though but a delicious and simple teacake. I hope you like it!

This mosambi cake can also be used as a cake sponge for frosting cake. The texture of the cake is soft, light and spongy. The taste of the cake is undoubtedly one of the best sponge cake. Trust me you won’t regret trying it!

INGREDIENTS TO MAKE SWEET LIME CAKE:

This section explains what all ingredients is used in making the sweet lime cake, how to use or choose certain ingredients and substitution options. For measurements, see the recipe card below.

FLOUR – All purpose flour is used here. You can use 50-50 ratio of whole wheat and all purpose flour. If you don’t want to use all purpose flour (maida) you can absolutely use whole wheat flour.

MILK POWDER – Dairy milk powder is used in the recipe. You can use any whichever available. Milk powder gives a nice taste and texture to the cake. You can skip it if you don’t want to use but would recommend using it if it is available to you.

SALT – A dash of salt is used to balance the sweetness and enhance the taste.

BAKING POWDER – Both the leavening agents – baking powder and baking soda is used in the recipe to give a perfect rise to the cake.

BAKING SODA – Baking soda is mixed with curd first and then used in wet ingredients.

CURD / YOGURT – Thick curd is used here. You can use Greek yogurt.

SUGAR – Refined white sugar is used here. Using other sweetener like brown sugar and jaggery will change the colour of the cake.

SWEET LIME JUICE – Freshly squeezed sweet lime juice is used here.

SWEET LIME ZEST – Freshly grated sweet lime zest is used.

OIL – Sunflower refined oil is used here. You can used any neutral flavor oil or can also use butter. You can even use 50-50 ratio of oil and butter.

ESSENCE – Vanilla essence is used here. You can also use vanilla extract.

FOR GLAZE:

SUGAR – Sugar is powdered into fine powder. Take ¼ cup granulated or caster sugar and grind it I to a fine powder.

SWEET LIME JUICE – Freshly squeezed sweet lime juice is used.

SWEET LIME ZEST – Freshly grated sweet lime zest is used.

HOW TO MAKE SWEET LIME CAKE

STEP BY STEP PICTORIAL INSTRUCTIONS TO MAKE SWEET LIME CAKE

MAKING THE GLAZE:

In a small bowl add in the powdered sugar, sweet lime juice and zest.

Mix well until smooth and a thick consistency glaze. Keep aside.

MAKING THE CAKE::

Preheat oven @180° C for 10 minutes. Grease a cake tin with oil and line with parchment paper.

In a mixing bowl add in the curd (yogurt) and baking soda. Mix well and keep aside for 3-5 minutes.

Add in sugar, sweet lime juice, zest, oil and vanilla essence.  Mix well to combine and incorporate the mixture together well.

Sieve in the all purpose flour, milk powder, baking powder and salt. Sift them.

Gently fold them and make a smooth batter.

Transfer the batter onto the prepared cake tin and tap the cake tin to release any air bubbles trap inside.

Bake them at a preheated oven @180° C for 30-35 minutes with both rods on. A skewer inserted should come out clean.

Remove from the oven and let it stand for about 5 minutes. Demould the cake and allow the cake to cool down completely.

Once the cake has cool down completely, drizzle the glaze over the cake. Cut and serve. Enjoy!

NOTES:

You can use whole wheat flour or a mixture of both.
You can swip the oil with butter.
Milk powder is optional but recommend to use if you have.
To make with egg, you can use 2 eggs and opt out the curd and baking soda.
Allow the cake to cool down completely before drizzling the glaze.
For powdered sugar, grind ¼ cup (4 tablespoon) granulated or caster sugar into fine powder in a mixie Or blender.

Ingredients

For Cake:

  • 128 Grams All purpose flour (1 cup)
  • 30 Grams Milk powder (3 tablespoon)
  • ¼ Teaspoon Salt
  • 1 Teaspoon Baking powder
  • ½ Teaspoon Baking soda
  • 100 Grams Curd / Yogurt (4-5 tablespoon)
  • 100 Grams Sugar (½ cup)
  • 150 ml Sweet lime juice (⅔ cup)
  • 1 Teaspoon Sweet lime zest
  • 60 ml Oil (¼ cup)
  • 1 Teaspoon Vanilla essence

For Glaze:

  • 50 Grams Powdered sugar (½ cup)
  • 2 Tablespoon Sweet lime juice
  • 1 Teaspoon Sweet lime zest

Instructions
