Vegetable fried rice is a quick and easy to make fried rice recipe. It is a fuss free recipe that can be prepared in few minutes with easily available ingredients, customizable with any of your favorite mix-ins. This veg fried rice is perfect for quick one-pot meal and so irresistibly delicious.
This veg fried rice is prepared with leftover rice, vegetables, soya sauce, vinegar, red chilly sauce, spring onion greens and seasoned with salt and pepper.
Fried rice is a staple food to many South-East Asian Countries. In India also fried rice is served and tops the menu of almost all fine dining restaurants and fast food street vendors.
Fried rice is something that I cook very often at home for quick meal. This recipe is one of the easiest veg fried rice you will come across without compromising on the taste. It’s that simple but unbelievably delicious and scrumptious. Believe me you’re going to agree with me!
Fried rice can be prepared with freshly cooked rice or left over rice also. I prefer making fried rice with leftover rice. If you are using freshly cooked rice, refrigerate it for a few hours. It will make sure the final dish doesn’t turn mushy and the rice grains are separate.
You can use the ingredients especially the vegetables according to your choice or based on the availability or to suit your palate.
Vegetable fried rice is a wholesome, unbeatable and nutritious one-pot meal which can eaten on it’s own and doesn’t require any accompaniment with it. But at the same time it goes very well with some dish like chicken manchurian, vegetable manchurian, chilli chicken dry/semi-gravy, chilli pork, pork fry, drums of heaven, chicken 65 etc.
For vegetarian you can add seasonal and exotic veggies like broccoli, zucchini, green peas, sweet corn, baby corn, cauliflower, mushroom, paneer (cottage cheese) or tofu etc to this basic recipe.
For non-vegetarian you can add in your choice of meat like chicken, mutton, beef, pork or seafood like prawns, fish fillets, squid, crab meat or eggs. If you like chunks of egg in fried rice, you can add scrambled the eggs and toss them up along with the rice. Or you can scrambled the egg along with the vegetables so you won’t find too many chunks of egg in the fried rice.
The key to a perfect and slightly smoky flavor fried rice is stir-frying the rice at high heat in a cast-iron skillet or wok. It imparts a lovely aroma. Though a stovetop in our home kitchen, cannot compete with the heat and temperature of the stovetops in restaurants, you can still make a great homemade fried rice.
We really need to cook the rice at a pretty high temperature. This prevents the fried rice from being mushy.

INGREDIENTS THAT GOES INSIDE VEGETABLE FRIED RICE
This section explains what all ingredients is used in making the vegetable mayonnaise cheese sandwich, how to use or choose certain ingredients and substitution options. For measurements, see the recipe card below.
RICE – Medium grain basmati rice is used in the recipe. You use long grained basmati rice, jasmine rice or normal rice.
OIL – Refined sunflower oil is used in the recipe. You can use vegetable oil, sesame oil or peanut oil.
VEGETABLES – Veggies like onion, carrot, capsicum, cabbage and spring onion greens is used here. I have sliced the vegetables but you can chopped them as well. You can use vegetables.of your choice or whichever is available to you.
SAUCES – Soya sauce, vinegar and red chilly sauce is used in the recipe. You can use all of these or simply use soya sauce.
MSG – I have used a dash of MSG aka Ajinomoto. This is totally optional.
SEASONING – Salt and pepper is used for seasoning. You can skip the pepper if you wish. You can also add chilly flakes.

Vegetable Fried Rice
Here’s a step by step pictorial instructions to make vegetable fried rice:
Start by keeping all the ingredients ready especially the vegetables.
Heat oil in a wok or frying pan.
Add in the sliced onion and saute for few seconds.
Add in the carrot, capsicum, cabbage, salt and saute for a minute. I love a bit of crunch in the veggies so I saute for few seconds to a minute.
Add in the soya sauce, vinegar, chili sauce, pepper, MSG and mix well to combine.
Add in the rice and give it a good mix.
Stir fry for about 2 minutes on high flame. The fried rice should be fried over high flame stirring it constantly.
Add in the chopped spring onion greens, give a quick mix and take off the flame.
NOTES, TIPS AND TRICKS
● Do not over cook the rice. The rice should be Al dente just like how we cook pasta and rice for risotto.
● If you have leftover rice that makes the best fried rice. Or you can plan ahead and cook the rice night before and allow to dry out in the refrigerator.
● There should be no moisture in the rice otherwise your fried rice will turn soggy, mushy and will stick to each other.
● Stir fry at a high heat for a perfect outcome.
● Use vegetable of your choice or any seasonal vegetables you like.
● You can add in choice of meat or seafood or eggs for non-vegetarian and for vegetarian add in mushroom, baby corn, tofu, paneer (cottage cheese) etc.
● To make spicy veg fried rice, add some red chili powder or chili flakes or schezwan sauce to make schezwan fried rice.

- 4 cups rice cooked
- 3 tablespoon oil
- 1 large onion sliced
- 1 carrot julienne
- 1 capsicum sliced
- ⅓ cup cabbage finely
- 1 tablespoon salt or as per taste
- 1 tablespoon soya sauce
- 1 teaspoon vinegar
- 2 teaspoon red chilli powder
- ½ teaspoon pepper powder
- ¼ teaspoon MSG (optional)
- ¼ cup spring onion greens

WHICH RICE IS BEST FOR FRIED RICE?
You can use any kind of white rice you like. Short or medium grain or even long grain basmati rice and jasmine rice is good to make fried rice. The most important is remember to cook your rice the night before you plain to make fried rice, meaning leftover rice is best to make a perfect fried rice.
HOW TO MAKE FRIED RICE NOT SOGGY?
If you’re using freshly cooked rice make sure you drain your rice thoroughly. There shouldn’t be any water in the rice and it has to be cooled down completely. Water contain in rice will make the fried rice soggy while stir frying. If the rice is not cooled down completely it will make the rice sticky and the rice will stick to each other while stir frying. You can refrigerate the cooked rice for sometime and then fry them.
WHY DO FRIED RICE TURN OUT MUSHY?
The most important thing when it comes to making fried rice is not the over cook the rice. Al dente cooked rice is perfect for non-mushy fried rice. If rice grains have softened or overdone, they will break when stir-frying and become mushy.
