Chicken is one of the most cooked item in my kitchen. Be it for mid-day snacks, lunch or dinner. Ours is a hard core non-vegetarian family. Since my kiddo likes more of chicken compared to other non-veg like mutton, fish, any seafood or non-veg, so chicken is always there in the menu even if there are other non-veg dishes. Here I would highly recommend some of the Chicken Recipes from my blog. Please do have a look. I hope you like it and if at all you try any of the recipe please do share your feedback in my social media handle mentioned below. I would love to see your creation.

Preparation time: 10 minutes
Cooking time: 25 minutes
Serves : 3

Ingredients:

For Marination:
300 gms Chicken boneless cubed
1 tsp Ginger garlic paste
1 tsp Peppercorns cracked
1 tsp Kashmiri chilly powder
1 tbsp Soya sauce
2 tbsp Cornflour
1 Egg
salt to taste
Oil for frying the chicken.

For Sauce:
1 tbsp Soya sauce
1 tsp Vinegar
2 tbsp Red Chilly sauce
½ tsp Sugar (optional)
2 tbsp Tomato ketchup
2 tbsp Corn flour

Other Ingredients:
2 dry red chilly
2 green chilly chopped
1 tsp Garlic chopped finely
1 tsp Ginger chopped finely
1 large Onion cubed
½ tsp Kashmiri chilly powder
Water as required
½ Cup Red & Green Capsicum cubed
Spring onion greens chopped for garnishing (I used chopped coriander as I run out of stock of spring onion)

Instructions:

Take all the ingredients mentioned in the marination list, mix well and marinate for 30 mins atleast. If you are in hurry skip the marination.

In a pan heat oil. Add the chicken in batches and fry in medium heat until golden brown. Do not fry the chicken for long as it will make them hard. Transfer to an absorbent paper to drain excess oil. Set aside.

In a small bowl mix 2 tsp cornflour in little water and keep aside.

Again in a small bowl add the Soya sauce, vinegar, red chilly sauce, sugar, tomato ketchup, mix well and keep aside.

In a pan heat around 2 tbsp oil use the same oil used for frying the chicken.

Add the dry chilly, ginger, garlic and fry for a min.

Add the onion, green chilly, capsicum and saute for a min.

Add the sauce mixture, chilly powder and allow to bubble then add the cornflour mixture.

Mix well and immediately add 1 cup of water and let it bubble up.

Now add the fried chicken, mix well coating the chicken nicely in the sauce. Add little more water if required and simmer for around 5 mins.

Garnish with chopped spring onion greens and serve.

I served it with egg fried rice. I have linked the recipe of easy egg fried rice above. Do have a look.
