Coming to my vegetable mayonnaise cheese sandwich recipe, it is a quick sandwich recipe that can be made in minutes with very few ingredients. This veg sandwich has no seasoning added and made with white bread, vegan mayonnaise, processed cheese, crunchy vegetables like cucumber, onion, capsicumand sweet corn. I made two layer club sandwich using the same stuffing in both the layers. They are further toasted in a tawa aka griddle until the bread is golden brown and crisp.
Any bread can be used, but for a healthy version include whole wheat bread or multi grain bread.

This vegetarian sandwich recipe can be easily made vegan by using vegan butter or oil and dairy-free cheese.
There are many types and ways of making sandwich. This recipe can also be made in a different. I am sharing how I made it. The other way to make this recipe is just mix the vegetables and mayonnaise together. Fill it in between two slices of bread, sprinkle the grated cheese, cover it with one bread slice and toast or grill it. Your veg mayo cheese sandwich is ready to relish.
I prefer not to make it spicy, no seasonings and other sauces. You can use it as per your palate preference.
Toasting is optional. I love it both ways. But if we have time and carving to have something hot then toasting or grilling satiate the carving. But no doubt the outcome of both is equally tasty!
To make this veg mayo cheese sandwich, I have used a tawa (griddle). You can also toast it either using a sandwich maker or in griller.

Here’s a step by step pictorial instructions to make vegetable mayonnaise cheese sandwich:
Start by making the vegetables ready. Slice or chop them as per your likings.

Take 3 slices of bread and spread 1 tablespoon of mayonnaise each slice of the bread (only on one side of the bread)
Layer the vegetables one after the other on 2 slices of the bread.
Sprinkle the grated cheese over the vegetable layers.
Gently place one prepared bread slice over the other one. Cover it with the other bread slice and gently press it.

Heat a tawa or griddle and apply some butter.
Carefully place the prepared bread on the tawa and gently press it. Toast the sandwich until golden brown and crisp on low to medium flame. It takes hardly a minute to get perfectly toasted.
Apply butter on top of the bread slice. Flip over, gently press it and toast it until golden brown and crisp. I have used a tawa to toast the sandwich.
Your veg mayo cheese sandwich is ready. Serve it with ketch-up or dipping sauce of your choice. Enjoy!!
