Vegetable Fried Rice ( Easy Fried Rice)

Vegetable fried rice is a quick and easy to make fried rice recipe. It is a fuss free recipe that can be prepared in few minutes with easily available ingredients, customizable with any of your favorite mix-ins. This veg fried rice is perfect for quick one-pot meal and so irresistibly delicious.

Ingredients
  

  • 4 cups rice  cooked
  • 3 tablespoon  oil
  • 1 large  onion sliced
  • 1 carrot  julienne 
  • 1 capsicum  sliced
  • ⅓ cup cabbage  finely 
  • 1 tablespoon  salt or as per taste
  • 1 tablespoon  soya sauce
  • 1 teaspoon  vinegar 
  • 2 teaspoon  red chilli powder
  • ½ teaspoon  pepper powder
  • ¼ teaspoon  MSG (optional)
  • ¼ cup spring onion greens

Instructions
 

  • Start by keeping all the ingredients ready especially the vegetables.
  • Heat oil in a wok or frying pan.
  • Add in the sliced onion and saute for few seconds. 
  • Add in the carrot, capsicum, cabbage, salt and saute for a minute. I love a bit of crunch in the veggies so I saute for few seconds to a minute.
  • Add in the soya sauce, vinegar, chili sauce, pepper, MSG and mix well to combine. 
  • Add in the rice and give it a good mix.
  • Stir fry for about 2 minutes on high flame. The fried rice should be fried over high flame stirring it constantly. 
  • Add in the chopped spring onion greens, give a quick mix and take off the flame.

Notes

  1. Do not over cook the rice. The rice should be Al dente just like how we cook pasta and rice for risotto.
  2. If you have leftover rice that makes the best fried rice. Or you can plan ahead and cook the rice night before and allow to dry out in the refrigerator. 
  3. There should be no moisture in the rice otherwise your fried rice will turn soggy, mushy and will stick to each other.
  4. Stir fry at a high heat for a perfect outcome.
  5. Use vegetable of your choice or any seasonal vegetables you like.
  6. You can add in choice of meat or seafood or eggs for non-vegetarian and for vegetarian add in mushroom, baby corn, tofu, paneer (cottage cheese) etc.
  7. To make spicy veg fried rice, add some red chili powder or chili flakes or schezwan sauce to make schezwan fried rice.
