Nagaland has many tribes and sub-tribes, the cuisine of these tribes are distinct and yet some overlap each other and still have some delicacies that are specific to a particular Tribe. The Naga Cuisine uses mostly meat, fishes, fermented bamboo shoots, fermented soya bean, vegetables, chillies and lots of herbs in their cooking. Most of the dishes are zero oil and thus it is also considered as one of the healthiest food. The Naga meal mainly consist of rice which is the staple food, meat, fish, spicy chutneys, boiled vegetables etc.

Fish with fermented bamboo shoot is a common Naga speciality dish which is very famous and one of the most popular dish in Naga Cuisine. It is a traditional and authentic naga fish recipe.

Naga style fish is a zero oil dish. Not even a drop of oil is used in this recipe and that’s how we cook our dishes. Very tasty, flavorful, exotic and healthy as well. It is a simple and easy recipe with simple process.

The ingredients used to make this naga style fish are fish, fermented bamboo shoot, green chillies, ginger, garlic, salt and water. Here I have used the whole fermented bamboo shoot which has being shredded with hand into long thin strips. This is a naga special fermented bamboo shoot. Not available this variety of bamboo shoot? No worries you can use the pounded fermented bamboo shoot.

The fish is boiled along with all the ingredients the recipe calls for till it is cooked and water is evaporated completely. Such a simple cooking process and fuss free – No tempering, no sauteing, no stirring in between. Just put everything in the pot and cook till it is done. Isn’t it that simple?

This is a dry side dish perfect with piping hot steam rice along with curries or dal and other side dishes. This naga style fish is served after completely cooling down. It is best when served the next day.

Serves: 4

Ingredients for Fish With Fermented Bamboo Shoot:
(Cup measurement used is 240 ml)

500 gms fish
15 green chillies or as per taste
2 inches ginger
10 Garlic cloves
½ cup Bamboo Shoot shredded or minced
Salt to taste
Water as required

How to cook Fish With Bamboo Shoot:

In a pan add the cleaned fish.

Coarsely ground the green chillies, ginger and garlic and add them to the fish. Add the Bamboo Shoot to the pan.

Add salt as per taste and gently mix them well together.

Add required water covering the fish completely and cook on till the water is completely evaporated approx 20-25 minutes.

Your boiled fish with bamboo shoots is ready. Let it cool down completely and gently spoon them in a serving dish and serve with steamed rice.

Notes:

✔If one cannot source bamboo shoot you can substitute bamboo shoot with tomatoes.
✔At the end of the preparation you can add some chopped coriander leaves as garnish, traditionally we don’t add them but with passage of time people started adding them as garnish and fresh flavor.
✔This dish is served best the next day.
✔Raja Mircha fans can add a bit of chopped king chilly for the extra heat and flavour.
