To cook this masala mutton fry we don’t need any fancy technique or ingredients. It is one recipe which does not require much effort to prepare and can be quickly made if all the ingredients are ready in place. Cooked in less than an hour with simplest of ingredients, it is so delicious, flavorful and full of aroma.
Mutton masala is prepared in a variety of styles in India. Mutton masala are versatile and lip-smacking good in whatever way it is prepared.
Here I have used bone-in meat (goat or lamb), whole spices, masala powder, pureed onion and tomato, ginger garlic paste and some herbs like green chilli, coriander leaves and curry leaves.
In this recipe we have used readymade masala spices. It’s no doubt freshly grinded whole spices gives the dish a unique flavour and aroma. But since I am making a quick, simple and easy mutton masala, I have used readymade masala along with some whole spices which are tempered and cooked along with the meat.

This masala mutton fry recipe is so versatile that it can be cooked and served in your regular daily meal, parties, festivals or any special occasions at home. It can be served as an appetizer with your favourite drink or a side with your meal – any variety of rice or any Indian flat breads like roti, chapathi, parantha or dosa and idli. It goes well with almost everything.

INGREDIENTS FOR MAKING MUTTON MASALA
This section explains what all ingredients is used in making the easy mutton masala, how to use or choose certain ingredients and substitution options. For measurements, see the recipe card below.
MEAT – I have used bone-in tender goat meat. I have cut them into medium-large pieces. You can use boneless meat and cut them into preferred pieces.
POTATO – Used the regular potato cunt into big cubes. You can use baby potato as well.
OIL – I have used refined sunflower oil. You can use sesame oil, mustard oil or vegetable oil.
ONION – The recipe uses regular onion which are pureed. You can finely chop them or sliced them and use. You may also use shallots (sambar onion/vengayam) if they are available to you.
TOMATO – Used the regular tomato in pureed form. You can use chopped or sliced tomato.
GINGER GARLIC PASTE – Freshly grinded ginger garlic is used. You can coarsely ground them or can use store bought ginger garlic paste.
HERBS – Curry leaves, coriander leaves and green chilli is used in the curry.
MASALA POWDERS – Tumeric powder, red chilli powder, coriander powder, cumin powder, black pepper powder, meat masala powder (optional) and garam masala powder is used.
SPICES – Whole spices used in the recipe are fennel seeds, cumin seeds, Bay leaf, green cardamom, cinnamon and cloves.
SALT as per taste.
WATER as required.

HOW TO MAKE EASY MUTTON MASALA

STEP BY STEP PICTORIAL INSTRUCTIONS ON HOW TO MAKE EASY MUTTON MASALA
Heat oil in a pan or a pot.
Add in the bay leaf, whole spices and curry leaves. Saute for few seconds.
Add in the pureed onion and ginger garlic paste and saute for about one minute.
Add in the pureed tomato, salt as per taste and saute for for 2 minutes.

Add in the spice masala powder – turmeric, red chilli, coriander, cumin, black pepper, meat masala and half of garam masala powder(half of garam masala reserve for later). Mix well and saute for a minute.
Add in the meat. Mix to combine the meat and masala well. Put on the lid and cook over low-medium heat for 5-10 minutes.
The mutton will strat releasing water and cook on its own juice. Keep stirring the dish in regular intervals so that it doesn’t stick to the bottom of the pan and also cooks evenly.
Add in the potatoes. I recommend to cut them into big chunks or pieces. Mix well. Put on the lid and cook on low-medium for about 2 minutes.

Add in water as required. Mix well. Cover it and cook until the meat is tender and is cooked through, stirring them occasionally in between the cooking. Add in water if required.
It took approximately 40 minutes in total. Cooking time defer according to the tenderness of the meat.
Adjust the consistency as per your requirement. If you want more gravy add more water.
Lastly add in the slit green chillies, chopped coriander leaves and the reserved garam masala powder. Mix well for a minutes and take off the heat.

NOTES:
● Try to use tender meat so that it cooks faster and you get a tender meat.
● You can cook this mutton masala in pressure cooker if you are running out if time. After adding water pressure cooker for 6-8 whistles depending upon the tenderness of the meat and your pressure cooker.
● You can use freshly grinded whole spices as well.

- 2 Teaspoon Ginger garlic paste
- 2 Medium Tomato pureed
- 1 Tablespoon Salt (Or as per taste)
- ½ Teaspoon Turmeric powder
- 2 Teaspoon Red chilli powder
- 1 Teaspoon Coriander powder
- ½ Teaspoon Cumin powder
- ½ Teaspoon Black pepper powder
- ½ Teaspoon Meat masala powder
- ½+½ Teaspoon Garam masala powder
- ¼ Cup Coriander leaves chopped (Or as per taste)
- 2 Medium Green chilli slit
Instructions

STORING & SERVING SUGGESTION
Serve it as an side dish or main course with flatbreads or rice. You can also have this as an accompaniment with your favourite drinks.
This mutton masala can be stored in refrigerator for 3-4 days. You can freeze them in the freezer in an airtight container for longer duration.
For serving remove from refrigerator and allow to come to room temperature. Heat by adding little water and serve.
