Have you ever tried wai wai noodle salad before? A unique salad with great flavour and texture! I have been making this for many years and I absolutely loved it! Well, it is one of my all time favourite salad. It is easy and quick to put together and enjoy it. If you have never tried it before, try it out for yourself this weekend! The flavours of the wai wai noodle and crunchy veggies would satiate your taste buds.
This is one of the easiest snacks to carry it to potlucks, also to kill your anytime hunger pangs and a perfect side dish. There’s nothing more satisfying than a good salad any day. They’re so refreshing, colourful and scrumptious and contain all the best nutrients your body needs to keep pushing through the summer. I make this salad often for my family and loved ones and have no doubt I’ll be making it again soon!
An easy peasy noodle salad made using wai wai instant noodles and fresh vegetables. It is a cooked noodle salad and not a raw noodle salad. I will share the instant noodle salad raw version soon in my blog so do keep a watch and follow my blog.
As mentioned this salad couldn’t be much easier. You’ll start with boiling the noodles for just 1-2 minutes and then finely chop all the veggies. To make ramen noodle salad, you’ll put fresh chopped red cabbage, mixed of yellow green capsicum, carrot, english cucumber, spring onions, cooked wai wai noodles, parsley and salad dressing if using and toss to mix well together and you’ve got the perfect side dish.
Here’s a great tips on how to make a soup from the stock retained from while cooking the noodles. You can make a soup by using the stock. Just add ½ cup water and bring to boil. Garnish with chopped parsley and season with pepper and serve it as soup along with the salad. If you try it out the recipe, let me know how you like it!

Serves : 3
Ingredients:
1 packet Wai Wai Noodle
1 cup Water
½ cup Red Cabbage sliced thinly or chopped
¼ cup Yellow Capsicum chopped
¼ cup Green Capsicum chopped
¼ cup Carrot chopped
½ cup English cucumber chopped
¼ cup Spring onion chopped
1 tbsp Parsley chopped + for garnish
1 tsp Chilly flakes
Salt to taste
2 tsp any salad dressing (this is optional)
Instructions :
In a pan add the water and bring to boil. Add the Wai Wai Noodle along with the packet seasionings and cook for about 2 mins.
Take out the noodles in a bowl from the stock.
In the noodle bowl, add the red cabbage, yellow & green capsicum, carrot, cucumber, spring onion, chopped parsley, salad dressing, salt to taste and toss them well.
Put the salad in a serving dish, sprinkle the chilly flakes over it, garnish with a parsley sprig and serve.
