WHAT IS BLANCHING?

Blanching is a cooking process in which a food, usually a vegetable or fruit, is scalded in boiling water for a brief time. It is typically followed by a quick thorough cooling in iced water or placed under cold running water to halt the cooking process. Blanching stops enzyme actions which otherwise cause loss of flavor, color and texture. Blanching also removes some surface dirt and microorganisms, brightens color and helps retain the nutritional value. It also wilts greens and softens some vegetables (broccoli, asparagus) and makes them faster to cook.

Here blanching helps in removing pesticide residues in the broccoli, retains the color and tenderizing the broccoli. Hence very less oil is used in this recipe for sauteing because of the blanching done ahead. It’s also healthier due to the less oil used yet it’s way more flavorful than doing a full saute or just a regular steam.

Here’s why you’ll love this broccoli recipe

✔️ It is a great recipe that is quick as well as easy.
✔️ It is simple to prepare and is ready in 10 minutes.
✔️ Beginners friendly and bachelor recipe because it doesn’t require any fancy skills with minimum ingredients and efforts.
✔️ It is healthier because blanching helps to preserve nutrients, the colour and the broccoli is also half way cooked in the process of blanching si it doesn’t require much sauteing.
✔️ It is gluten-free, low carb and vegan too so everyone can enjoy it.
✔️ It is great to have it on its own or as a side with your main dish.
✔️ It pairs well with dishes like oven roasted chicken leg quarters, cheesy chicken fritters, spicy grilled chicken, tangdi malai kebab, mutton tawa dry roast, pan baked chicken leg, peri peri chicken, peri peri chicken strips, crispy fried chicken, pan seared pepper fish, sauteed garlic herb prawns, pizza stuffed meatloaf

VARIATIONS

One of the best part of this recipe is that it’s so customizable.

✔️ Use any vegetable of your choice! Here’s some few vegetables I like – cauliflower, carrots, french beans, zucchini, mushrooms or a mixture of vegetables available.
✔️ You can just saute it with garlic and pepper. But i love adding a bit of heat so finely chopped chillies add to the heat and also adds a nice hint of colour to the green.
✔️ Switch up the flavor by using different spices like red pepper flakes, paprika, oregano, onion powder, garlic powder etc.
✔️ Make additions like olives, fresh onions or shallots.
✔️ If you’re a non-vegetarian, you can turn this simple dish to a light meal by adding bacon, sausages or shredded meat or seafood of your choice.
✔️ Use butter instead of olive oil, or use a flavor oil like sesame or avocado oil.
✔️ Top it up with some grated cheese!

No matter what you serve it with, this is hands-down one of our easiest and fastest side dishes that we love when we need something quick and hearty to round out the meal!
