This amaranth stir fry is a diabetic friendly recipe. Here the leaves and tender stem are stir fry with just green chilly and garlic seasoned with salt. This is a simple and easy recipe prepared with just 5 basic ingredients.

Ingredients:
- 150-200 gms Amaranth leaves
- 2-3 Green Chilly chopped
- 4 Fat Galic cloves chopped
- Salt to taste
- 1 tbsp Oil
Method:
Wash the amaranth leaves thoroughly in water. Chop the leaves along with the tender stem. Chop green chillies and garlic too and keep aside.
Heat oil in a pan. Add the chopped green chillies and garlic and saute for a min.
Add the chopped amaranth leaves and season with salt. Mix well and stir fry for 10-12 mins.
