INGREDIENTS TO MAKE FRUIT CUSTARD

This section explains what all ingredients is used in making the fruit custard, how to use or choose certain ingredients and substitution options. For measurements, see the recipe card below.

Vanilla custard powder – I have used my homemade custard powder. My homemade custard powder is made of cornflour, milk powder, sugar, vanilla essence and yellow food colour. The best thing about using this homemade custard powder is that you dont need to use milk and even sugar as they already have them. If you want more richness and more sweetness then you can use whole milk or low fat milk and sugar as per your taste.

Usually store bought custard powder does not contain milk and sugar, that is  why we use milk and sugar while making store bought custard powder.

Milk – I have used whole milk here. If you want to make it vegan you can try with coconut or almond milk.

Sugar – I have used white sugar. Since my homemade custard powder has sugar, I have used less sugar. You can use as per your preference.

Fresh Fruits – The fresh fruits I have used in this fruit custard are apple, banana, mango, orange segments, black grapes, green grapes and pomegranate arils. You can use fruits of your choice or seasonal fruits too. Avoid using melon family as they leave water easily and make the custard runny.
Apart from the one mentioned above, these are some fruits you can use –  strawberry, kiwi, blueberry, raspberry, cherry, pears, papaya etc.

FRUIT CUSTARD VARIATIONS

Make custard trifle – You can make delightful custard trifle using your favourite cake sponge, custard sauce and fresh fruit. Take a serving glass or bowl and start layering them one after the other till your desired layers and serve chilled.
Make Custard Jelly – You can add in 2-3 flavors of jelly to this fruit custard. They taste very delicious and looks absolutely beautiful.
Make Mango Custard – Add in mango puree to the custard which turn it into delicious mango custard.
Make Vermicelli Custard – Roast the vermicelli and cook as per the package instructions. Add in the cooked vermicelli to the custard sauce. You can use fresh fruits along with roasted dry fruits and nuts or use any of them.

Easy Fruit Custard Video Tutorial

Here is a step by step pictorial instructions to make easy fruit custard:

Wash the fruit nicely and pat dry with kitchen towel. Dice or chop all the fruits and keep it ready.

In a heavy bottom sauce pan add in the milk and turn on the flame. While the milk is warming up, take 3-4 tablespoons of the warm milk in a small bowl.

Add in the sugar onto the remaining milk and allow to come to a boil. Stir occasionally in between to prevent from sticking.

Meanwhile mix the custard powder with the luke warm milk and stir very well to make a smooth slurry without any lumps.

When the milk starts to boil, simmer the heat and pour the custard mixture and stir it continously so that no lumps are formed.

Cook the custard in low-medium heat until it starts to thicken approximately 4-5 minutes stirring it continuously to prevent from forming lumps and burning.

The custard must coat the back of the spoon or ladle well but must be yet of runny consistency. Keep in mind that as the custard cools, it will thicken more.

Take off the heat and stir well for sometime to make it smooth and also it helps to cool down the custard.

Transfer the custard to a bowl. Add in the cut fresh fruits and mix well. Let it chill in the refrigerator for 1-2  hours. Scoop in individual serving bowl, garnish with fresh fruits and serve chilled!

You can do it in the other way – Once the custard has cool down transfer it to a bowl and let it chill in the refrigerator for few hours. Just before serving, add in the cut fruits and mix well. Scoop into serving bowls, garnish with fresh fruits and serve!

NOTES:

● Use fruits of your choice or any seasonal fruits.
● Avoid using watermelon, musk melon etc as they leave water and makes the custard runny and watery.
● You could also add some nuts and dry fruits like raisins, cashews, pine nuts, pistachios, almonds, walnuts, pecans.
● While adding custard slurry make sure your flame is at low. If you add custard slurry in rolling boiling milk your custard will form lumps.
● To make it vegan you ca  use coconut milk or almond milk instead of dairy milk.
● Sugar can be adjusted as per your preference. You can increase to ½ cup if you want to make it slightly sweeter custard sauce.
● Make sure that the custard is cooled completely before adding chopped fruits to the custard.
