Pasta Mushroom Soup is a scrumptious, delicious and flavorful soup made with instant pasta with goodness of mushroom and other vegetables. It is an all-in-one pot soup perfect for a quick dinner or lunch which can be fixed easily without putting in much efforts.
Slurp it just like that or serve it with a light salad or bread toast or garlic bread. You can even try this soup with Irish Flatbread or Pol Roti (Srilankan Coconut Flatbread) for a filling and scrumptious meal.
Pasta is a regular in my home as my kiddo loves pasta. But I go for the regular pasta most of the time instead of the instant pasta. Pasta is a great medium to sneak in lots of vegetables; to feed fussy eater who refuses to eat vegetables. Even my kid refuses to have any vegetables and I use to bribe him with pasta treat to make him have veggies.

Pasta mushroom soup is a light, warming and very comforting soup. Nutritious, filling and a satisfying bowl of this soup is very simple and easy to prepare. It is not heavy like the restaurant style cheesy pasta soup.
I have used instant pasta for making this recipe from maggi brand. The flavor I have used is maggi pazzta cheesy tomato twist. You can also try using any different flavor for this recipe.
This is a very easy and basic pasta soup recipe. One is free to add or omit the veggies as per their choice and taste preference. Even the seasonings can be adjusted to one’s taste buds. Since I have used instant pasta it already comes with packet seasoning. So I have used only chilly flakes and cracked peppercorns as extra seasonings along with the vegetables.

CAN THIS BE MADE VEGAN?
YES… In this soup very less butter and cheese is used. To make it vegan you may use olive oil or any oil and you can omit the cheese. Instead of cheese you can add some grated tofu which is again totally optional.
CAN THIS SOUP BE MADE AHEAD OF TIME?
Absolutely! It is a perfect make ahead dish. You can make the base soup ready ahead of time. A few time ahead of serving, you just need to make the pasta, heat the soup, add the prepared pasta and serve. Isn’t that great and time saving?

Feel free to add, substitute or innovate the recipe.
● You can add dried mixed herbs or oregano. It gives a nice flavor to the soup.
● Add vegetables of your choice.
● You can use fresh herbs if available.
● Broccoli and zucchini are good vegetable add ons in this recipe.
● You can also add shredded or small cubes boiled chicken.
● You may use regular pasta instead of the instant pasta; only the cooking time will be longer if using regular pasta.

☆ Measuring cup used is 240 ml
Ingredients to make pasta mushroom soup:
1 packet Maggi Pazzta Cheesy tomato twist
2+2 cups water
1 tsp butter
1 cup sliced Mushroom
1/4 cup chopped carrot
2 tbsp sweet corn
2 tbsp red and green capsicum
Salt to taste
2 tbsp grated processed cheese
1 tbsp chopped coriander leaves
1 tsp Chilly flakes
½ tsp Cracked peppercorns
Step by step picture instructions on how to make pasta mushroom soup:
Add 2 cups of water, add the maggi pazxta and the tastemaker and stir well.
Bring to a boil and simmer for 5 mins. Once cooked transfer it to a bowl and keep aside.
In a pan add butter, sliced mushroom, season with salt and pepper and saute for 5 mins.
Add chopped carrot, sweet corn, red and green capsicum and saute for 2 mins.
Add 2 cups water and bring to a boil. Add the cooked pasta and stir well.
Add chopped coriander leaves and grated cheese.
Season it with chilly flakes and cracked peppercorns and take off the heat.
