Vegetable Mayonnaise Cheese Sandwich (Vegetarian Sandwich)

This two layer sandwich is a scrumptious and easy-to-prepare vegetarian sandwich made with white bread, crunchy vegetables stuffing, vegan mayonnaise and cheese. Eat them as a cold sandwich or toasted or grilled. It makes a great breakfast sandwich for a busy morning. It is also perfect for picnic, potluck and parties to serve as a finger snack. This can also be eaten as a snack or a light meal.

- 6 slices bread
- 6 tablespoon mayonnaise
- ⅓ cup processed cheese grated
- 1 small cucumber thinly slice
- 1 onion s thinly sliced
- ¼ cup capsicum sliced
- ¼ cup sweet

Start by making the vegetables ready. Slice or chop them as per your likings.
Take 3 slices of bread and spread 1 tablespoon of mayonnaise on each slice of the bread slice (only on one side of the bread).
Layer the vegetables one after the other on 2 slices of the bread.
Sprinkle grated cheese over the vegetable layer.
Gently place one prepared bread slice over the other one.
Cover it with the other bread slice and gently press it.
Heat a tawa or griddle and apply some butter.
Carefully place the prepared bread on the tawa and gentlypressit. Toast the sandwich until golden brown and crisp on low to medium flame. It takes hardly a minute to get perfectly toasted.
Apply butter on top of the bread slice. Flip over, gentlypress it and toast it until golden brown and crisp. I have used a tawa to toast the sandwich.
Your veg mayo cheese sandwich is ready. Serve it with ketch-up or dipping sauce of your choice. Enjoy!!

You can use any bread, like whole-wheat bread, brown bread or white bread or multi-grain bread. To make it healthy, avoid using white bread.

Serve this sandwich with a light soup or salad for a light meal.

If you're planning to serve for some parties or get-together, you can make the veggies ready and store in refrigerator. Prepare the sandwich few minutes ahead of serving. Do not make and keep the sandwich for too long. It might turn very soft.

If you like to make it extra cheesy, you can add a slice of processed cheese or mozzarella cheese in between.

You can add whatever veggies you have in the fridge. There is no hard and fast rule to preparing this sandwich.
