Aloo Pitika / Mashed Potato

Aloo pitika is a very simple, easy and quick recipe prepared with mashed potato and very minimal ingredients. Its a soulful and comfort food ans is ready in less then 15 minutes.

Assamese cuisine is characterised by very little use of spice and strong flavors with the use of exotic fruits, vegetables and medicinal herbs. Mustard oil is the preferred oil. Rice also called bhaat is the staple food and is a part of all meals. Aloo Pitika is a signature side dish and is a must dish in a every assamese thali. Aloo pitika is probably the most popular pitika and side dish of Assam.

This is a soulful, comfort food and all time favourite of the Assamese. However there are many different types of pitikas made from different vegetables, dry fish, boiled eggs and small variety of fish called puti mass. These pitikas are served as a side dish with rice along with other dishes.

Making aloo pitika is quick and easy with simple process. It is a dish prepared with mashed potato. The potatoes are boiled and mashed and mixed with onion ,green chilly, chopped coriander leaves with drizzle of raw mustard oil.

The flavour from the raw mustard oil in the pitika is out of world and amazing. Adding raw mustard oil to the pitika takes the whole platter to a different aromatic level.

Notes:

✔You can cook the potato whole with skin, once cooked remove the skin and mash.
✔Green chilly can be adjusted as per your heat preference.
✔The potato need to be cooked nicely from inside out.
✔If you are not used to the pungency of raw mustard oil, heat the oil till it starts to smoke. Let it cool down and then add to the mashed potato.
✔King chilly fans can add a bit of finely chopped bhut jolokia. Its amazing!

HOW TO MAKE ALOO PITIKA

Ingredients to make Aloo Pitika:

3 large Potatoes
3-4 Green Chilly finely chopped
2 Onion finely chopped
Few Coriander leaves chopped
2 tbsp Mustard oil
Salt to taste
Water as required to cook the Potato

Step by step instructions to make aloo pitika:

Peel the potatoes, roughly chop them and pressure cook for 2-3 whistles or you can normally cook them in a pot.

Drain the cooked potatoes and let it cool down.

In a mixing bowl add the potatoes and mash them smoothly.

Add the chopped onions, green chillies, coriander leaves, raw mustard oil and season with salt .

Mix them well together. Serve it as a side dish with piping hot rice.

Ingredients
