Take all the ingredients mentioned in the marination list, mix well and marinate for 30 mins at least. If you are in a hurry skip the marination.
In a pan heat oil. Add the chicken in batches and fry in medium heat until golden brown. Do not fry the chicken for long as it will make them hard. Transfer to an absorbent paper to drain excess oil. Set aside.
In a small bowl mix 2 tsp cornflour in little water and keep aside.
Again in a small bowl add the Soya sauce, vinegar, red chilly sauce, sugar, tomato ketchup, mix well and keep aside.
In a pan heat around 2 tbsp oil use the same oil used for frying the chicken.
Add the dry chilly, ginger, garlic and fry for a minute.
Add the onion, green chilly, capsicum and saute for a minute.
Add the sauce mixture, chilly powder and allow to bubble then add the cornflour mixture.
Mix well and immediately add 1 cup of water and let it bubble up.
Now add the fried chicken, mix well coating the chicken nicely in the sauce. Add a little more water if required and simmer for around 5 minutes.
Garnish with chopped spring onion greens and serve.
