Whole Wheat Banana Walnut Cake ( Eggless Banana Walnut Cake)

An eggless banana walnut cake made with whole wheat flour, overripe bananas and walnuts. A classic and easy banana cake that takes only 15 minutes for preparation and perfectly baked under 35 minutes. Whole wheat banana walnut cake is tender and ultra moist, you just can't stop with one slice! This banana walnut cake can be served as a tea cake and also a perfect base to frost with your your favourite frosting.

Ingredients
  

  • 1 cup whole wheat flour (128 gram)
  • 2 large banana overripe
  • ½ cup sugar (100 grams)
  • ½ cup buttermilk (120 ml)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon powder
  • 1 teaspoon vanilla extract or essence
  • ¼ cup oil (60 ml)
  • ¼ cup walnuts
  • 1 large banana sliced for garnish (optional)

Instructions
 

  • In a mixing bowl add the banana and mash them with fork or you can use electric beater.
  • In the banana mixture add buttermilk, sugar, oil, vanilla extract and mix well.
  • In a mixing bowl sieve the flour, baking powder, baking soda, cinnamon powder for twice and mix well.
  • Add the dry ingredients into the wet ingredients and gently fold to make a smooth batter.
  • Add the flour coated walnut into the batter and give a quick stir. Do not over mix the batter.
  • Grease a cake pan with oil. You can also also line the pan with parchment paper. Preheat oven @180° C for 10 minutes.
  • Pour the batter into the greased pan and tap 2-3 times to release the air bubbles inside.
  • Garnish with chopped walnut and banana slices.
  • Bake @180° C for 30-35 minutes or until a toothpick inserted comes out clean.
  • Remove the cake from oven and let it cool down. Invert and slice after the cake is cooled down completely.

Notes

  1. If you don’t have buttermilk, do not worry you can easily make at home. Take 1 cup of milk and add 1 tbsp of vinegar or lime juice, stir and keep for few mins and it is ready to use.
  2. You can use all purpose flour or 50-50 ratio of WWF and APF.
  3. You can use brown sugar or jaggery or cane sugar instead of granulated sugar. 
  4. You can use melted butter instead of oil.
