Chocolate Wine Fruit Cake

This eggless chocolate wine fruit cake is moist, soft and amazing flavors from the fresh fruits and wine. It is loaded with dry fruits and nuts which you can feel it in every bite of the cake.

Ingredients
  

For Soaking:

  • 300 ml red wine
  • ¾ cup dry fruits (Raisin, black raisin, dates, Cranberries, blue berries, glazed cherry)

For Cake:

  • 1¼ cup whole wheat flour (214 grams)
  • 3 tablespoon cocoa powder
  • 3 tablespoon Chocolate syrup or chocolate melted
  • 2 tablespoon thick curd (yogurt)
  • ½ cup (120 ml) fresh mixed fruit juice (apple, orange, green grape, black grapes and pomegranate)
  • ⅓ cup (80 ml) melted butter or oil
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ¾ cup (150 grams) sugar or brown sugar
  • ½ cup nuts chopped (pistachios, walnut, cashewnuts, almonds)
  • 2 teaspoon orange zest
  • ½ teaspoon cinnamon powder
  • 1½ teaspoon vanilla extract (I used sprig vanilla extract)
  • 1 tablespoon vinegar or lemon juice
  • ½ teaspoon salt
  • Fresh fruits for garnish as required

Instructions
 

Soaking The Dry Fruits:

  • In a glass jar soak the dry fruits. Make sure the fruits are well immersed in the rum. I soaked for 2 weeks.
  • You can soak for 2-3 hours if you would like to try instantly. Wine can be substituted with orange juice for non-alcoholic version.

Making The Cake:

  • Remove the soaked dry fruits from the jar and add them in a small mixing bowl. Add the chopped nuts to the soaked fruit, add some flour and mix well so it doesn’t sink to the bottom.
  • Grease a cake pan and line with parchment paper. Preheat the oven @180° C for 10 minutes.
  • In a mixing bowl add the curd, vinegar, sugar, baking soda, mix well and stand for 5 minutes.
  • Add fruit juice, butter, chocolate syrup, vanilla extract, stir and let the sugar melt. I have added the leftover wine from the soaked fruits about 2 tbsp. Mix well.
  • In a mixing bowl sieve the flour, baking powder, cocoa powder, cinnamon powder, salt, mix well and keep aside.
  • Add the dry ingredients to the wet ingredients and gently fold to make a smooth batter.
  • Add the soaked dry fruits, nuts, orange zest to the batter and gently fold. Do not over mix the batter.
  • Pour the batter into the greased pan and tap the cake pan 2-3 times to release the air bubbles.
  • Bake @180° C for 45-50 mins until a tooth pick inserted comes out clean.
  • Remove from oven, let it stand for 5 mins to cool down. Demould and let the cake cool down completely. Garnish with the fresh fruits.

Notes

  1. Always start by preheating oven.
  2. You can use all purpose flour instead of whole wheat flour or 50-50 ratio.
  3. You can use melted chocolate instead of chocolate syrup.
  4. You can also use brown sugar for healthier version.
  5. Butter can be substituted with oil.
  6. You can also use your favourite alcohol like rum, brandy or whisky for soaking instead of wine.
  7. If you want to make a Non-Alcoholic version soak the dry fruits in orange juice or mixed fruit juice or your preferred fruit juice. Soaking the fruits in juice should not be more than a week and should be refrigerated while soaking. Soaking can be done for few hours to maximum a week.
  8. Use your favourite fresh fruits.
  9. Use the dry fruits and nuts of your choice or as per availability.
  10. If you want to bake this cake with eggs, you can use 2 eggs and omit the yogurt and vinegar.
