Cottage Cheese Salad

Cottage Cheese Salad (Paneer Salad) with fresh veggies is a quick and easy recipe which does not require much effort to make and is ready in 15 minutes. When you want to have something light and filling than this salad is a good option. Make it in jiffy and enjoy this refreshing and delicious salad. A perfect vegetarian recipe to relish.

Ingredients
  

  • 100 grams cottage cheese / paneer cubed
  • ½ cup yellow and green capsicum sliced or chopped
  • 1 small cucumber sliced or chopped
  • 1 onion sliced or chopped
  • 1 tomato sliced
  • 8-10 leaves baby spinach
  • ¼ cup purple cabbage sliced
  • 1 carrot julienne
  • 1 tablespoon fresh parsley chopped
  • 1 tablespoon chilly flakes
  • few peppercorn crushed
  • salt as per taste
  • few drops oil to toss the cottage cheese

Instructions
 

  • In a small bowl crumble 2-3 cottage cheese cubes and keep aside.
  • Grease a pan with few drops of oil and toss the cottage cheese for 3-5 mins on all sides.
  • In a mixing bowl add the veggies, tossed cottage cheese, chilly flakes, fresh parsley, season with salt and pepper and toss them well together.
  • Scoop them in serving bowl or plate, garnish with crumbled cottage cheese, parsley and serve.

Notes

  1. Cottage cheese can be replaced with tofu if you’re looking for a vegan option.
  2. Use veggies of your choice or seasonal veggies.
  3. You can also use your favourite salad dressing.
