Vanilla custard cookies from scratch. These custard cookies are made without using store bought custard powder. These super easy cookies are made with all purpose flour, cornstarch, Ossoro brand vanilla custard essence which did the magic in giving an amazing flavor, butter, powdered sugar and baking powder.

First of all wishing all my Indian friends and readers a very Happy Independece Day. Let’s celebrate together 15th August in true spirit of freedom. Sharing a simple cookie recipe in tricolor ‘ Vanilla Custard Pinwheel Cookies’ to celebrate the occasion.

Time to celebrate our 74th Independence Day with these tricolor swirl cookies. These cookies are a small tribute to all the freedom fighters and the soldiers who protect our nation. This Independence day, prepare these super crispy and crunchy delicious vanilla custard swirl cookies in colors of Indian flag and celebrate the occasion with your friends and loved one.

I even called these cookies as Tiranga Cookies because of the colors that represents the Indian Flag. Tiranga means tricolor in Hindi, and the Indian flag is also fondly called Tiranga which represents the colors saffron, white and green with the Ashoka Chakra, a 24 spoke wheel in blue color at the centre. I have just used the colors to represent the Indian flag, you could use whatever colors you wish to!

VANILLA CUSTARD PINWHEEL COOKIES

They’re just average butter cookies of the ice-box or refrigerator variety. Ice-box /refrigerator cookies are butter rich cookies where the dough is shaped typically into a log and refrigerate it or freezed it to harden. This makes it easy to sliced the cold dough and then bake it. The reason why the dough is refrigerated before baking is to prevent the cookie dough from spreading as it bakes in the oven.

Ice-box or refrigerator cookies are usually a little crisp. Sometimes the centre of your cookies might turn a bit of a chewy centre if your cookie thickness is more. Though the crispiness and crunchiness depends entirely on how thin or thick you slice your dough.

Here I have used vanilla custard essence from Ossoro brand to give the cookies a custard flavor and taste.

VANILLA CUSTARD PINWHEEL COOKIES

Preparation time: 45-60 minutes
Baking time: 15-20 minutes
Yields: 25

☆ 1 cup = 240 ml
☆ 1 tablespoon = 15 ml
☆ 1 teaspoon = 5 ml

Ingredients to make vanilla custard cookies:

1½ cups all purpose flour
6 tablespoons cornstarch
1 teaspoon baking powder
½ cup or 100 gms/1 stick butter room temperature
⅔ cup/160 ml powdered sugar
½ teaspoon ossoro vanilla custard essence
2-3 tablespoons milk if required
Few drops each of green and saffron food colours

* Add little salt if using unsalted butter.

Step by step pictorial instructions to make vanilla custard cookies:

In mixing bowl, add the butter and powdered sugar. Mix well and cream them until light and fluffy.

Add the ossoro vanilla custard essence and give a quick mix.

Seive in the flour, cornstarch and baking powder into the butter mixture. Mix well and bring the mixture together.

Add the milk gradually and make a smooth dough.

Divide the dough into 3 approximately equal portions. Since we are make tricolor cookies we are dividing the dough into three portions.

As we are going to reflect the tricolor of Indian flag in the cookies, so we’ll be using saffron and green color in the dough. For the white we’ll be leaving one portion of the dough as it is.

Add few drops of green color to one portion of dough and few drops of saffron color to another portion. After adding the color knead the dough well until the color is incorporated nicely in the dough.

Cling wrap all the dough separately and chill the dough in fridge for 10-15 minutes for ease of rolling.

Remove the dough from the fridge and start rolling them one after the other. Roll them into ¼ inch thickness rectangle shape. Start with the green color dough followed by white color dough and then saffron color dough. You can use parchment paper while rolling the dough.

Now place a cling wrap on the surface and place the green color rolled dough, then place the white color rolled dough over it and then saffron dough over the white color dough to make a 3 layered dough rectangle. Gently give a quick press with a rolling pin or with your hand.

With a knife trim off the uneven edges if any to make the dough even rectangle shape dough.

Start rolling the dough from one end of the rectangle as tightly as possible into a log.

Cling wrap the log and refrigerate for 20-30 minutes. I used freezer to make it set faster.

Preheat the oven to 180° C with both rods on. Grease the baking tray with oil or butter or line with parchment paper.

Remove the log from the freezer and unwrap it. Using a sharp knife, slice each log into ¼ inch rounds.

Place them on the prepared baking tray with some gap between each cookies.

Bake the cookies for 18-20 minutes until the edges starts to crisp.

Remove from oven and let it stand in the tray for about 5 minutes.

Transfer the cookies to a wire rack and let it cool down completely. They turn more crisp as it cools down.

Your super crispy vanilla custard pinwheel cookies are ready to be served with hot tea or coffee.

NOTES:

● Always preheat the oven.
● You can put the dough in freezer to make it harden faster.
● I have not used store bought custard powder because I had to add colour to two portions of the dough and one portions as white. Since the store bought custard powder gives yellowish colour to the cookie.
● You can use store bought custard powder. Just replace the cornstarch with custard powder.
● If using unsalted butter add a little amount of salt.
● You can replace butter with ghee here.
● You can use any colour of your choice. I had to represent Indian flag color so I used green and orange colour.
● While making a log, roll the dough as tightly as possible to prevent gaps in the cookie swirl.
● You can substitute the essence with vanilla extract or good quality vanilla essence.

  • 1½ cup all purpose flour (192 grams)
  • 6 tablespoon  cornstarch /cornflour

  • 100 grams butter room temperature (½ cup or 1 stick)

  • ½ teaspoon  vanilla custard essence (or 1 teaspoon vanilla essence or extract)
  • 2-3 tablespoon  milk (if required)
  • 2 drops each saffron and green food colour
