Twisted Tutti Frutti Rolls ( Twisted Bread Rolls)

Fluffy and mildly sweetened bun filled with tutti frutti (candied raw papaya) and fresh grated coconut. These gorgeous looking buns are soft and eggless with a whole lot of flavor. They are ridiculously delicious and treat to the eyes too. These beauties are perfect for your holiday gathering! Pair one of these with a hot cup of tea for a perfect holiday breakfast or simply with your evening tea!

These tutti frutti rolls or sweet fruit rolls reminds me of the good old times. Those childhood memories, when we savour this sweet buns from the local bakery and school canteen.

These homemade tutti frutti buns are so easy to make and taste much better then the ones you get at the store! Soft and fluffy sweetened buns filled with candied papaya and fresh coconut – they make the perfect treat for the holiday season!

Tutti frutti is a candied fruit which is used in many baked goodies and desserts here in India. Eggless Tutti Frutti Cake and Custard Tutti Frutti Muffins from my blog is a personal favourite and loved by many of my readers. They look gorgeous and really catches the attention. I absolutely loved to use them in cakes, dessert and cookies. So I thought of recreating these sweet buns that I once loved so much! These rolls are very attractive and addictive too. They are just gorgeous!

It’s quite simple to prepare, as far as yeast bread goes. It is simple bread recipe which I have tried to give a different look inspired by cinnamon rolls and braided bread. The fillings is inspired by the famous Tamil Nadu bakery style Thengai Bun (coconut bun) and Dilkush. The rolls turned out pretty good in taste as well in look. I am sure you are going to be wowed by the results.

WHAT IS TWISTED TUTTI FRUTTI ROLLS?

What is a tutti frutti? Tutti frutti is candied papaya. Chopped raw papayas are cooked in sugar syrup. Different food colours are used and dried in sun or in room temperature under the fan. They are then turned into beautiful looking candied fruit. This bun is basically a bread roll filled with tutti frutti and grated coconut that’s been cut, twisted and roll out into bun shape, thus giving a nice twisted beautiful looking bun. Here I have used active dry yeast for the dough rise.

The best part, it is eggless. I hope you guys like this one. You can enjoy these sweet bread rolls as such or with some jam and butter over a cup of tea or coffee. I personally love them with masala tea or simple strong chai. Buns and chai goes very well together, an amazing combination which every Indian loves, I wish you should definitely give it a try if you haven’t tried out yet!

FILLING VARIATIONS ON TWISTED TUTTI FRUTTI ROLLS

I have filled these buns with tutti frutti and fresh finely grated coconut. You can use desiccated coconut as well instead of fresh coconut. Some of the variations

● Cinnamon and sugar
● Any variety of jam or mixed fruit jam
● Chocolate chips
● Chocolate spreads
● Nutella
● Can also sprinkle sesame seeds, poppy seeds in the fillings and on top of the rolls.
● Can turn these into dinner rolls by making it a savoury version by adding your favourite filling like cheese, chunks of meat, bacon, sausage, veggies etc.

DOUGH PROOFING

These tutti frutti twist buns are easy to make and it took lesser time when it comes to dough proofing as compared to other yeast bread. My dough got doubled in 40-45 minutes. It got perfectly proofed in lesser time as compared to others proofing time. This is because the humidity and temperature at your place will influence how your dough rises.
The second resting after shaping the bun also took lesser time. So consider the time mentioned as a guide and do it accordingly.

Important Notes:

● For kneading, please keep the time into account, timing may differ depending on the brand of the flour. Knead until the dough becomes soft and non-sticky atleast 5-10 minutes.

● The liquid measurement may also vary and not exactly as given in the recipe. It might take lesser or little more as mentioned in the recipe. This is because each flour absorbs water and hydrates differently. It is advisable to always reserve some liquid and not add it all in one go. This way you can add the liquid as and when required and also to avoid adding over liquid to the dough which might ruin the dough and outcome of the bread texture. If dough is too dry, add the reserve liquid one tablespoon at a time until the right consistency.

● Please note that the proofing timing may also vary depending on your climate and environment. The humidity and temperature at your place will influence how your dough rises. Mine got perfectly proofed and doubled in 45 minutes.

● Also note that the baking temperature and timing provided are what works for my oven. Every oven behaves a little differently, so please adjust accordingly for your oven.

TWISTED TUTTI FRUTTI ROLLS

Preparation time: 1 hr 30 mins
Cooking time: 25-30 minutes
Yields: 6-8 buns

☆ Measuring cup used is 240 ml
☆ 1 tablespoon (tbsp) = 15 ml
☆ 1 teaspoon (tsp) = 5 ml

Ingredients to make twisted tutti frutti rolls:

For yeast mixture:
1 tsp active dry yeast
1 tbsp sugar
½ cup lukewarm water

For the dough:
2 cups all purpose flour
3 tbsp milk powder
3 tbsp powdered sugar
¼ tsp salt
¼ cup water
2 tbsp oil
½ cup tutti frutti/candied fruits
¼ cup finely grated coconut or desiccated coconut

Additional ingredients for brushing the bun before and after baking:

Milk as required
Butter as required

Step by step pictorial instructions to make twisted tutti frutti rolls:

Grease a baking tray with oil/butter or use parchment paper. Preheat oven @180°C for 10 minutes.

Preparing the yeast: In a bowl add the yeast, sugar and lukewarm water. Stir well to combine. Cover and let it rest it for 10 minutes.

Preparing the dough: In a large mixing bowl, sieve in the flour, milk powder, powdered sugar and salt. Stir to combine them together.

BICHI

Make a well in the centre of the flour mixture and add the activated yeast.

Mix well using a spoon. Now using your hand combine the mixture to form a soft dough by adding oil and water.

Take out the dough in a lightly floured surface and knead the dough using stretch and fold method for about 10 minutes.

Grease the bowl lightly with a bit of oil. Place the dough in the greased bowl, cover the dough with cling wrap and keep for 45 minutes until doubled.

The dough has doubled.

Remove the cling wrap and gently punch down the dough to flatten.

Take out the dough and gently knead it for 2-3 minutes. Now cut the dough into 6-8 equal portions. Shape all the portions nicely into balls in your palm and set aside.

Roll out the portions with rolling pin into 18-20 cms rectangle shapes.

Lightly apply butter over it and sprinkle the tutti frutti followed by desiccated coconut.

Roll over from one end and make it into a log.

Make a cut from the bottom end and slit through the top.

Twist the dough one over the other through the end.

Roll over the twisted dough and shape into a bun.

Place these buns on a greased baking tray and cover with a clean towel. Let it rest for another 15-20 minutes.

Now remove the towel and brush the buns lightly with milk. You can use butter as well.

Bake the buns in a preheated oven @180°C for 25 minutes until golden brown.

Remove from the oven and lightly brush the buns with butter and cover them with a clean towel for 10-15 minutes.

Enjoy them with hot cup of tea at breakfast or with evening tea.

Notes:

● Bake at preheated oven with both rods on.
● Proofing time may differ so proof it as required until the dough doubled.
● Milk powder is optional. If you dont have it please skip it.
● You may use milk instead of water for the dough.
● Adjust the sugar as your preference.
● These rolls were pretty big in size, you can make smaller rolls if you like. I made 6 big rolls from this recipe.
● For the fillings you can use chocolate chips, chocolate spread, cinnamon and sugar, any jam, nutella etc.
● With the tutti frutti and coconut you can add dry fruits and nuts like raisins, cashewnuts, almonds etc and a dash of cardamom flavor.

  • ¼ cup coconut finely grated or desiccated coconut

Instructions
