Coconut Thumbprint Cookies

These coconut jam cookies with a bit of your favourite jam is definitely something to savor with a hot cup of tea or coffee. These cookies are insanely good — soft, buttery, coconut-flavored, and filled with jam. What more could you ask for in a bite of cookie?!

These delicious thumbprint cookie recipe is incredibly easy and quick. If you are looking for holiday cookie, these thumbprint jam cookies are the one you need to go for. These eggless coconut cookies are baked to perfection and filled with delicious mixed fruit jam, perfect for the holidays! But they are so melt-in-your-mouth and insanely delicious that you will love them any time of the year!

This is my personal favourite cookies and so much childhood memories attached to it. I remember how much we used to buy this cookies from bakery and confectionery shops in my childhood days for tea snacking.

The Cookie Dough

The dough for these cookies can be whipped up easily in no time. You just need a bowl to make the cookie dough with the help of hand or a spatula or spoon. However you can use a stand mixer to do the same but it’s not necessary.

Unlike any cookies recipes, just start by creaming the butter and sugar together. Then you add the dry ingredients that the recipe calls for. Mix it all together until you get a cohesive dough and no dry ingredients remain in the bowl.

This recipe doesn’t call for the dough to be refrigerated. However, you can make the dough ahead of time, cling wrap it and refrigerate until you’re ready to bake the cookies.

I usually roll my thumbprint coconut cookies directly in desiccated coconut, however these step is completely optional. You can also roll in beaten egg and then in desiccated coconut or coconut flakes. Also you can totally skip the rolling in desiccated coconut and simply roll them and make an indentation and fill it with jam.

How Long Do You Bake For A Perfect Thumbprint Cookies?

Thumbprint cookies are just like shortbread cookie recipe. They are delicate, soft and melt in mouth cookies. They get baked in lesser time approximately 15-20 minutes until the edges and bottom are golden. Off course sometimes the baking time may differ since each oven reacts differently as per the temperature settings of the oven. So we need to keep an eye and check the cookies in the process of baking. The cookies will seem to be slightly soft once they’re out of the oven so let them stand in the baking tray for about 5 minutes and then transfer the cookies to a cooling rack and let them cool down completely.

How To Prevent Thumbprint Cookies From Cracking?

Cracking is common with shortbread cookies as the dough is so soft. Likewise thumbprint cookies may have slight crack and it’s ok to have some cracks on the cookies. After taking a portion of the dough, you can roll the cookie dough between your hands until it has a smooth surface with no cracks. After pressing an indent into the cookie dough ball, if there’s a crack, simply press it back together.

Can I Freeze Jam Thumbprint Cookies?

Yes! This recipe freezes beautifully!! Bake the cookies and allow them to cool completely. Then place in an airtight container or zip top bag and freeze for up to 3 months. For serving just take out the cookies from the freezer in advance and keep the cookies out at room temperature.

How to store thumbprint cookies:

Once the cookies are completely cooled down, simply place them in an airtight container and store at room temperature for up to a week.

Thumbprint Cookies Recipe Video

Preparation time: 20 minutes
Baking time: 20-25 minutes
Yields: 15 cookies

☆ Measuring cup used is 240 ml
☆ 1 tablespoon (tbsp) = 15 ml
☆ 1 teaspoon (tsp) = 5 ml

Ingredients to make thumbprint cookies:

1 cup whole wheat flour
2 tbsp cornstarch
50 gms butter (I used salted butter)
3 tbsp Virgin coconut oil (check notes #5)
⅓ cup/5 tbsp desiccated coconut (few tbsps extra for coating the cookies which is optional)
½ cup jaggery powder
Jam for filling ( I used mixed fruit jam)

Step by step pictorial instructions to make thumbprint cookies:

Preheat oven @180° for 10 minutes. Grease a baking tray with oil or butter. You can line with parchment paper too.

In a mixing bowl add in the soft butter, jaggery powder and virgin coconut oil.

Whisk well until creamy and incorporated.

Add sieved flour, cornstarch and desiccated coconut.

Mix and gather them together with a spatula or spoon.

Using your hand gather the mixture and make it into a dough. No need to knead the dough.

Take small portion of the dough, roll it between your hands.

Roll the cookie in the desiccated coconut and using your thumb, press an indentation into the center of each cookie.

Fill the indentation with jam.

Without coconut coating.

Place the cookies in the prepared baking tray leaving some gap in between each cookie.

Bake at preheated oven @170° C for 20 minutes until the edges and bottom of the cookies are golden. If not done bake for another few minutes.

Remove from oven and let it stand on the baking tray for about 5 minutes.

Transfer the cookies on a cooling rack and let it cool down completely.

Enjoy with your favourite hot or cold beverage.

Notes:

✔ All ingredients to be at room temperature.
✔ Always preheat your oven.
✔ Whole wheat flour can be substituted with all purpose flour or blend of gluten-free flour available in stores or make your own blend with almond flour & rice flour.
✔ Jaggery can be substituted with brown sugar, cane sugar or refined sugar.
✔ You can skip the virgin coconut oil and use 100 gms butter altogether or use any cooking oil like sunflower or vegetable oil in place of the coconut oil.
✔ If using unsalted butter add a pinch of salt.
✔ You can use homemade butter or store bought butter, salted or unsalted. But no margarine or butter spreads
✔ You may use your favourite jam.
✔ Rolling in desiccated coconut is optional. But I love doing that.
✔ You can also use fresh finely grated coconut.
✔ Don’t overfill the indent as you don’t want the jam to bubble over when it’s baking.
✔ If your dough is too soft, keep the dough in refrigerator for 15-20 minutes and then bake them.
✔ Baking time may differ, keep a check and bake until the edges and bottom of the cookies are golden.
