These crispy whole wheat ghee cookies are Indian style shortbread cookies. Do you believe these are made of only 3 ingredients? Yes, you heard me right. They are so easy to make with only 3 ingredients! The best part is, it does not use baking powder and baking soda for making these cookies. These bakery style ghee cookies are my favourite cookies to enjoy with my morning or evening chai/coffee.

These whole wheat flour cookies are made without eggs but they taste as good as cookies made with egg. So definitely you not gonna miss the eggs at all!

These bakery style cookies turned out really crispy and melt in the mouth. It gives a crispy texture even though it is made using ghee. The fat contains in ghee (clarified butter) tends to make cookies crispier just like how butter works.

These cookies are my family favourite and a regular at my home. Now also I sometimes buy these cookies whenever I cross the bakery. My little one is a great fan of cookies. He loves to have them with his tea or as a snacks anytime of the day.

These cookies also serves great for tea/coffee time small get-together, quick bite to kill the anytime hunger pangs, kids tiffin box, festive giftings etc.

Ingredient Substitute for Eggless Atta Ghee Biscuits

✔ Flour: Whole wheat flour can be substituted with all purpose flour or you may use 50-50 of both. You may also use other healthier flours used for making cookies and biscuits.

✔ Sweetener: Powdered sugar can be substituted with jaggery powder, brown sugar, cane sugar or coconut sugar.

✔ Fat: Ghee (clarified butter) can be substituted with room temperature butter. It may be either homemade or store bought butter. Both salted and unsalted butter will work.

How To Perfectly Bake These Cookies?

Baking time will depend on the thickness of your cookies. If your cookies are not very thick it will be baked in 12-15 minutes.

It also depends upon how crispy you want them.

My cookies thickness was about ½ inch so I bake them for about 20 minutes @180° C because I like them really crispy.

The cookies might look like soft right after baking but it will turn crisp as it cools down. So be careful not to burn the cookies by baking for longer time thinking it is uncooked or under baked.

You may bake the cookies until golden brown around the edges and for more crispy bake till the bottom is lightly brown.

Most important point is, all oven reacts differently so baking time may vary, so the safest is to keep an eye from 15 minutes onwards.

How to Store These Cookies?

Once the cookies are out of the oven, let it stand in the baking tray for about 5 minutes. Then transfer them on a cooling rack and let it cool down completely.

Once cooled, store in an airtight container. They should be good for 2-3 weeks at least. In my house it usually finishes off in 1-2 days.

Ingredients
  

  • 1 Cup Whole wheat flour (130 g)
  • ½ Cup Powdered sugar
  • ½ Cup Ghee (clarified butter) semi-solid Or butter
  • ¼ Teaspoon Salt (Optional)

Instructions
 

  • Preheat oven @180°C for 10 minutes. Grease a baking tray or line it with parchment paper.
  • In a mixing bowl add the semi-solid ghee and powdered sugar.
  • Whisk them well using a wired whisk or a spoon until smooth and creamy.
  • Seive in the flour and salt (if using) into the ghee sugar mixture.
  • Mix and combine them together well and make a dough. If required add few tbsps ghee or water/milk.
  • On a clean surface place the dough and flatten the dough with hand or with the help of rolling pin. Thickness should be not too thin nor too thick. I did about ½ inch thickness. You can do it as per your preference.
  • With a cookie cutter cut them into desired shapes. If cookie cutter is not available, you may use bottle cap or rim of steel cup to give the shape.
  • Place the cookie in the greased tray keeping some gap in between.
  • Bake at preheated oven @180°C for 15-20 minutes or until golden brown around the edges. Mine got baked at 20 minutes. But I baked again extra 5 minutes for extra crispiness and brown bottom. It was so perfect.
  • Baking time depends upon the thickness of your cookies and your oven temperature. Start checking from 15 minutes onwards.
  • Remove the cookies from the oven and let it stand in the baking tray for about 5 minutes.
  • Transfer them on a wired rack and let it cool down completely.
  • Store the cookies in an airtight container only once the cookies has cool down completely. Enjoy these whole wheat ghee cookies with tea or coffee.

    Thank u for such lovely and easy recipes, My family now thinks i am a pro baker… I even bought a new microwave … All your recipes work out very well…
    I just have a query that when i tried this particular recipe… after 20 mins in convection for 180 degree.. It was raw.. Then i again baked for 5 more mins.. it was still uncooked.. then i again cooked for 10 more mins.. still not cooked… but bottom part was golden yet top part was all batter… then i flipped those cookies and cooked it for more 15 mins… and still it disnt cook….
    Then again i tried another batch with maida and butter…. the same thing happened… and it didnt cook…
    Pls pls mam help me…. those ghee cookies was smelling so heavenly…. i really wanna cook those and have it…. my son fell in luv with the smell.. my husband even started having those raw ones…. pls help mam…
