This recipe is so quick and easy to throw the things together and bake to perfection. It’s a straight forward recipe. Mix the wet ingredients in a bowl and dry ingredients in another bowl. Combined both together to make a batter and pop it in the oven. Its does not contains ingredients like butter and sugar so no creaming required. You just need to puree the mango if your are not using canned mango puree and just a bowl and a spatula for the batter preparation. It doesn’t require any fancy equipment and technique. Minimal mess and maximum deliciousness.

I had a few pieces of mangoes left that were ripen and needed to be used as soon as possible. As I didnt want to make a cake this time, I decided to make a quick mango bread. The mango bread turned out very soft, moist and flavorful. I was happy I could make good use of those last peices of mangoes which as laying on the fridge.

This is a no yeast bread recipe and that’s why it is called a quick bread recipe. It is not only hearty and flavorful but this mango bread loaf is so simple and quick to make. Just stir together the dry and wet ingredients with a spatula or spoon. You dont need any fancy equipments like stand mixer to make this quick mango bread. So simple so quick and so so delicious!

Can this quick mango bread make with egg?

Yes! You can use 3 eggs and opt out the baking soda. You can either use buttermilk as mentioned in the recipe or replace buttermilk with whole fat milk.

The quick mango bread can be kept at room temperature for upto 3-4 days depending on the temperature of the place. If it is a colder place it’ll stay good for some few more extra days as compared to a hot weather place. You can cling wrap it or directly store it in a airtight container.

Can We Freeze Quick Mango Bread?

Yes it can be freezed in the freezer for couple of months. Use a freezer safe container.

To serve, thaw at room temperature for 2 to 3 hours if it is whole loaf and couple of minutes if it is slices.

Quick Mango Bread Recipe Video

Preparation time: 15 minutes
Cooking time: 55-60 minutes
Serves: 6-8

☆ Measuring cup used is 240 ml

Ingredients to make quick mango bread:

2 cups whole wheat flour
1 cup mango puree
¼ cup/4tbsp coconut sugar syrup
¼ cup/4 tbsp virgin coconut oil
1 cup buttermilk
2 tsp baking powder
1 tsp baking soda
½ tsp cinnamon powder (optional)
¼ tsp salt

● How to make buttermilk at home?

In a mixing bowl add the full fat milk and 1 tsp lemon juice or vinegar. Mix well and set aside. After 5 minutes the milk will curdle and your buttermilk is ready.

Step by step pictorial instructions to make quick mango bread:

Preheat oven @180° C for 10 minutes. Grease the loaf pan with oil and set aside.

Seive the flour, baking powder, baking soda and salt atleast twice. Mix well and set aside.

In a mixing bowl add the mango puree, coconut oil, coconut sugar syrup and buttermilk. Mix well until combined.

Add the flour mixture and cinnamon powder. Mix and combine them together. The batter is thicker than a cake batter. It shouldn’t be a runny like cake batter.

If the batter seems little tight, add 2-3 tbsps milk to loosen the batter slightly.

Pour the batter into the greased pan. Level the top and tap the pan for 2-3 times to release any air bubbles inside.

Bake the bread at preheated oven @180° C for 55-60 minutes. A toothpick inserted should come out clean.

Baking time will vary depending upon one’s oven temperature. Keep a check ahead of the mentioned time.

Remove the pan from the oven. Let it stand for about 5 minutes. Demould it and let it cool down completely.

Slice and serve. Apply jam or butter and enjoy with your tea or coffee.

Useful Tips And Notes:

● All ingredients should be at room temperature.

● Sieve the flour 2-3 times, this helps in getting a nice texture to the bread.

● Whole wheat flour can be substituted with All purpose flour.

● You can also use 50-50 % of whole wheat and all purpose flour.

● Virgin coconut oil can be substituted with olive oil or any flavorless oil.

● Use whole fat milk for extra richness, taste and texture.

● Coconut sugar syrup can be substituted with white sugar, brown sugar or other sweeteners like maple syrup or honey as well.

● Cinnamon power is optional. You may also use cardamom powder instead.

● You can add your choice of add-ons like nuts, dry fruits, candied fruits, chocolate chips and so on.

● You can add chopped mango pieces to the batter, you can feel the bite of mango in every bite of the cake.

● Each oven reacts differently so baking time may differ since the temperature varries from oven to oven. Keep a check few minutes ahead of baking time mentioned.

● Do not open the oven frequently to check the cake while baking is in process.
