This is an easy and quick chicken recipe prepared with a special store bought chicken masala, some few easily available ingredients and simple cooking steps. This is sure to be a hit in your family!

I love the combo of chicken and potato. Chicken and potato fry is one dish I make often with variations. This is one of the most cooked dish in my home. It’s so good to relish this when I dont want to go for elaborate cooking on a lazy day or when time constraint.

Chicken with potato is one of the most easiest and simple home style Indian chicken recipe for experts as well as beginners. There are different ways to make chicken fry with the use of whole spices and masala powders. This one is with south Indian flavor as I have used a store bought south indian flavor masala from maggi brand.

This is also a perfect dish when you have some sudden guest coming in and you dont have much time in hand. This delicious yet simple recipe can be your savior! It’s a straight forward recipe and requires no marination and no blending. All you need is the ingredients in place to make this super delicious chicken fry.

The chicken and potato is cooked on high heat at the beginning and at the last stage. In the middle of the cooking process the chicken and potato is slow cooked with the lid on by just keeping an eye and stirring it occasionally to prevent from sticking to the pan or getting burned.

HOW TO MAKE CHICKEN AND POTATO MASALA FRY?

You can make this delectable chicken at the comfort of your home using some easily available ingredients in your kitchen with few simple cooking methods. It doesn’t require any fancy techniques to cook this delicious chicken. Chunks of chicken and potato are cooked in a blend of aromatic spice such as ginger garlic paste, onion, green chilly, tomato, curry leaves, turmeric powder, red chilly powder, pepper powder and maggi south chicken masala. This chicken masala is available in grocery stores and super markets. This chicken masala has a unique and aromatic flavor. It will most probably be available in Indian stores so try to explore and get the ingredient and try it. It’s a blend of aromatic spices.

Let’s briefly see the process of making chicken masala fry. Heat oil and saute the onion, curry leaves, green chilly till onion starts to soft. Add ginger garlic paste and saute for a minute. Add tomato and saute till mushy. Add the turmeric, chilly, pepper powder, salt and saute for a minute. Add the chicken and potato, cover with lid and fry on high heat till oil starts to leave the sides. Add the south chicken masala powder, mix well and fry on low heat for 10-15 minutes. Increase the heat to high and roast them for 3-5 minutes stirring frequently. Add chopped coriander leaves and take off the heat.

I have not used water to make this chicken. However if you want to make it in semi gravy, with gravy or saucy version, you can add water while cooking and adjust the consistency as per your requirement.

VARIATIONS AND SUBSTITUTIONS

● You can make this recipe without the potato. Just skip the potatoes and follow the recipe as it is.
● If you are unable to source the chicken masala, you can use garam masala powder or meat masala powder.
● You can make this in semi-gravy and gravy gravy. Just add water as required.
● You can even make it slightly saucy by adding water while cooking and then evaporate the water. This will make the dish not a dry fry but slightly saucy.
● You can play with the masalas by adding cumin powder, coriander powder and garam masala or meat masala powder and opting out the maggi chicken masala.

Serving Suggestions

You can serve this chicken masala fry as a side with dal rice, dosa or any Indian bread such as phulka, paratha, chapati, roti etc.

You can also serve this chicken with your favourite drinks.

It also tastes great along with variety rice like ghee rice, jeera rice, coconut rice, pulao etc.

So let’s get started with the recipe and tips on how to cook south Indian chicken masala fry at the comfort of your own home with step by step pictures.

Preparation time: 10 minutes
Cooking time: 25 minutes
Serves: 4

Ingredients to make chicken and potato masala fry:

500 gms chicken
2-3 tbsp oil
2 potato cut into big wedges
2 onion sliced
1 large tomato chopped
2 green chilly slit
1 sprig curry leaves
1 tsp ginger garlic paste
1 tsp turmeric powder
1 tsp red chilly powder
½ tsp pepper powder
1 tsp maggi south chicken masala (see notes)
Salt to taste
Few coriander leaves chopped

Step by step picture instructions to make chicken and potato masala fry:

Heat oil in a pan. Add onion, green chilly, curry leaves and saute till onion starts to soften.

Add ginger garlic paste and saute for a minute.

Add tomato and fry till it turns soft and mushy.

Add turmeric powder, red chilly powder, pepper powder and salt. Mix well and saute for a minute.

Add chicken and potato and mix well.

Cover the pan and cook till the juice released by the chicken evaporates and the oil starts to leave the sides. It may take approximately 5 minutes or so on high heat. Stir it occasionally.

Add the chicken masala and mix well. Cover with lid and fry the chicken and potato on low heat for about 10-15 minutes stirring it occasionally in between the cooking.

Now increase the heat and cook on high heat for about 3-5 minutes till the chicken and potato is roasted well and slightly starts to brown. Stir them frequently for even roasting and to prevent it from burning.

Add chopped coriander leaves, give a quick stir and take off the heat.

NOTES:

● South chicken masala may be substituted with garam masala or meat masala powder.
● You can squeeze some lemon juice once you take off the chicken from the heat.
● You can add cumin powder and coriander powder.
● Green chilly can be replaced with dry red chilly.
● You can use mustard seeds and cumin seeds for tempering. First temper them in the oil and then saute the other ingredients.
