Juicy and flavorful grilled chicken breast that was marinated and cooked on a grill pan, classic salad ingredients and simple chilly and lime dressing is the perfect finishing touch.

This salad is a perfect summer salad. It’s colorful and packed with full of flavor. Grilled chicken, classic salad ingredients and simple dressing or simply seasoned with simple seasonings is my favorite way to use any leftovers from my grilled chicken.

This salad is a great way to enjoy grilled chicken in a freshing way making it a light & filling dish. Simply slice or chop grilled or baked chicken, toss in fresh seasonal veggies and drizzle the simple chilly lime dressing, garnish with with some fresh herbs and serve.

This salad can be made using any grilled meat or seafood. Meat like beef, pork, lamb and chicken can be used. Seafood like carb meat, prawns, shrimps and variety of fish are the options. Vegetarians can used grilled or baked button mushroom, paneer aka cottage cheese, tofu etc. All of the salad ingredients are perfect to complement any choice of meat, seafood and vegetables.

This easy and simple grilled chicken salad with chilly lime dressing is a healthy and delicious quick meal idea for any day of the week.

SIMPLE CHILLY AND LIME DRESSING

Sometimes you want the ingredients to really shine in your salad, like the grilled chicken and fresh crunchy veggies in this recipe, so you don’t need a powerful dressing. A simple mix of chilly flakes, lime juice, coconut sugar, pepper and salt is all you need. The coconut sugar adds a really distinct flavor to the dressing and the salad as a whole. You can use brown sugar or just normal sugar too. And of course you can use any dressing you want as long as it will go well the flavors here.

Ingredients Used In Grilled Chicken Salad

FOR MARINADE

▪︎ Liquids – Just oil and fresh lemon juice.
▪︎ Seasoning – Paprika, ginger garlic  paste, cracked pepper and salt

FOR DRESSING

▪︎ Liquids – Just fresh lemon juice.
▪︎ Seasoning – Chilly flakes, pepper powder and salt.
▪︎ Others – Coconut sugar

FOR SALAD

▪︎ Chicken – Breast boneless and skinless.
▪︎ Veggies – Carrot, English cucumber, onion, tomatoes, green & red chillies, cabbage.
▪︎ Legumes – Sprouted mixed legumes
▪︎ Herbs – Coriander leaves

The great thing about this salad is that you can customize it with your favourite ingredients. You can add or opt out any ingredients as per your likings.

Can I Make My Chicken In The Microwave Mode Or Oven?

I’ve made this chicken in a grill pan over cooking gas top but yes you can also make it in an oven and microwave. Just follow the directions for my baked chicken and peri peri chicken recipes which are cooked in an oven and in microwave mode over microwave respectively. Additionally you can grill the chicken in outdoor grills, gas grills, charcoal grills, electric grills, portable grills etc.

When I carve for something light and fresh meals, a simple grilled chicken salad is what I carve for and this salad is simply the perfect choice!

Tips For Making The Best Grilled Chicken Salad

▪︎ Marination is the key. The longer you let the chicken marinate for, the better it gets! It will become so flavorful and tender.

▪︎ Give some time for the grilled chicken to rest before slicing to prevent the juices to escape.

▪︎ If you make this salad ahead, leave the dressing off until you’re ready to serve.

▪︎ Salads are a great way to sneak in lots of healthy ingredients like beans, chickpeas, quinoa etc.

Ingredients to make Grilled Chicken Salad:

For marinade:

2 chicken breast
1 tbsp Paprika powder
1 tsp cracked peppercorns
1 tsp Ginger garlic paste
1 tbsp lemon juice
Salt to taste
1 tbsp Oil

For the salad:
1 Carrot sliced
1 small Cucumber sliced
1 onion diced
1 tomato diced
1-2 Green/Red chilly
½ cup cabbage thinly sliced
½ cup sprouts
Few coriander leaves chopped

For the chilly lime dressing:
2 tbsp Chilly flakes
3 tbsp Lemon juice
1 Tsp Coconut sugar
¼ tsp pepper powder
Salt to taste

How To Make Easy Grilled Chicken Salad

Get ready the chicken: Wash the chicken breast nicely and pat dry with clean kitchen towel. Prick the chicken breast all over with a fork on both the sides.

Marinade the chicken: In a bowl add all the ingredients mentioned in the marinade list and mix well. Rub the mixture all over the chicken breast, cover the bowl and keep aside for marination for atleast 30 minutes. The longer marination the better it is.

Heating the grill: Turn on the gas stove and heat a grill pan on high heat. Once the pan is heated, grease the pan all over with little oil.

Cook the chicken: Place the chicken breast to the grill pan and grill over medium heat for 5-6 minutes on the first side without flipping them. Now flip the chicken and grill for 5-6 minutes. Turn off heat and allow chicken breasts to rest for about 5 minutes before slicing them.

Making dressing: In a bowl add all the ingredients mentioned in the dressing list. Whisk well and set aside until use.

Assembling the salad: Place the salad around the plate. Place the sliced grilled chicken in the center of the plate. Drizzle the prepared dressing all over the salad. Garnish with chopped coriander leaves and serve. You can even toss them well and serve.

For Grilled Chicken:
