Potato Yogurt Salad is a refreshing, delicious and scrumptious salad. It is a low calorie dish making it a perfect mid-day meal or dinner. One can have it as a snacks or starter or as a side dish

It’s easy and quick to make. Just whisk the curd and all the other ingredients, add boiled potatoes, toss them well together and enjoy!

Most potato salad recipes use mayonnaise, but today I am sharing a variation using non-fat plain yogurt. Using yogurt adds a slight creamy tang to the potatoes which I absolutely love. It’s deliciously and is one of the most refreshing potato salad!

Unlike other potato yogurt salad this recipe uses no mayonnaise so this is a healthier alternative to the classic potato salad. And trust me it still taste so good and flavoursome. The yogurt is light, refreshing, and adds tanginess and flavor to the dish. It’s a dish you can actually feel good eating.

The creamy yogurt is low in fat and high in protein. This yogurt potato salad uses some fresh veggies and seasoned with crushed peppercorns, oregano and coriander leaves. One can use fresh herbs like dill, parsley etc instead of oregano.

Preparation time : 5 minutes
Cooking time : 10 minutes
Serves : 3

Ingredients :

2 potatoes peeled and chopped
1/2 cup Yogurt / Hung Curd
1 red chilly chopped
1 onion chopped
Crushed pepper for seasoning
Salt to taste
1/4 cup purple cabbage
1/4 cup chopped cucumber
1/2 tsp oregano
1/4 tsp Chilly flakes
Few chopped coriander leaves

Instructions :

In a pot add water, potatoes, salt and cook the potato till it is cooked but not mushy.

Make ready all the ingredients and gather them in a plate.

In a mixing bowl transfer all the ingredients.

Mix them well together and check the seasonings. Your healthy potato yogurt salad is ready to be served. Enjoy!
