Egg Fried Rice recipe with step by step pictures. This is a fuss free and easy recipe that can be cooked in just few minutes with easily available ingredients. This easy egg fried rice is something that I cook very often. This recipe is the easiest egg fried rice you will come across and believe me there is no compromise in taste too!

Fried rice can be prepared with freshly cooked rice or left over rice also. If you are using freshly cooked rice, refrigerate it for a few hours. It will make sure the final dish doesn’t turn mushy and the rice grains are separate.

You can use the ingredients especially the vegetables according to your choose or based on the availability or to suit your tastebuds.

You can add meats like chicken, mutton, beef, pork and seafood like fish, prawn, crab meat Or any vegetables like mushroom, broccoli, baby corn, french beans, sweet corn etc of your choice to this basic recipe.

Egg fried rice is a wholesome, unbeatable and nutritious one-pot meal which doesn’t require any accompaniment with it but at the same time it goes very well with Chicken Manchurian, vegetable manchurian, chilly chicken dry/semi-gravy, Egg Curry, Pepper Chicken Gravy etc. You can also pair it with some side dishes like Spanish Omelette, Peri Peri Chicken, Prawn 65, Baked Whole Chicken Leg, Pan Baked Chicken Leg etc.

If you like chunks of egg in fried rice, you can scrambled the eggs separately, remove, set aside and later toss them up along with the rice. Here I have scrambled the egg along with the vegetables so you won’t find too many chunks of egg in the fried rice. We really need to cook the rice at a pretty high temperature. This prevents the fried rice from being mushy.

Preparation time : 10 minutes
Cooking time : 20 minutes
Serves : 3

Ingredients:
2 cups cooked Rice
2 Eggs
2-3 tbsp Oil
1 large Onion chopped
2 Dry red chilli chopped
1 tsp ginger finely chopped
1 tsp garlic finely chopped
½ cup Cabbage finely sliced
½ cup Carrot finely chopped
½ cup Green & Red Capsicum finely chopped
2 tbsp Soya Sauce
1 tsp Vinegar
1 tsp Chilly powder or flakes
½ tsp cracked peppercorn
Salt to taste
Spring onion greens chopped for garnishing

Instructions :

Cook the rice as usual the way we cook. You can even use left over rice.

Heat oil in a pan. Add the onions, chilly, salt and saute till onion turns soft.

Break the eggs into the pan and spread it with help of stapula. Add the veggies, soya sauce, vinegar, cracked pepper and chilly powder, stir and mix well and saute on high heat for about 2-3 mins.

Add the cooked rice and mix well and saute on high heat for another 5 mins.

Garnish with chopped spring onion greens and serve.
