Spanish Omelette also known as tortilla is a classic Spanish dish. Spanish omelette can be a perfect breakfast to start the day with. Similarly this dish can be enjoyed hot or cold, as a starter, main dish or as a tapas/party appetizer.

Spanish omelette is a simple and quick recipe made lovingly with just a few simple ingredients, it makes a perfect light meal and turns out to be a power pack dish. It is a traditional Spanish dish with potato and egg as main ingredients of the recipe.

It is said that in authentic Spanish omelette; the potatoes are first deep fried in good amount of oil. And some even dont use onion, but I recommend using it. It adds a bit of sweetness to the dish. However, if you don’t like it or don’t have it on hand, it is OK. Just omit it so.

Here in this recipe I have not deep fried the potatoes, instead par boil them and saute them with onion in lesser oil. You can follow any of the method as per your preference but keeping health in mind I have omitted deep frying the potatoes.

Preparation time : 10 minutes
Cooking time : 15 minutes
Serves : 2

Ingredients:

Eggs – 3
Potatoes – 2 sliced in rounds
Onion – 1 sliced
Pepper to taste (optional)
Salt to taste
Few chopped coriander leaves (optional)
Oil – 2 tbsp
Water as required

Method :

Peel the potatoes skin and sliced them into rounds.

Break the eggs in a bowl.
Add salt and pepper to taste and chopped coriander leaves.

In a pan add some water, add the potatoes and par boil them for 3-5 mins.

Remove the potatoes and keep aside.

Heat a pan and add oil. Add onions and saute till it turns soft. Add the potatoes and saute till it starts to brown.

Arrange the potatoes and onions and pour the egg mixture over it and spread the mixture

Sprinkle pepper and salt to taste, cover and cook on low heat till the bottom starts to brown.

Flip over gently, cover the pan and cook for couple of mins and take off the heat.
