Potato Cauliflower Curry also known as Aloo Gobi is a soul satisfying and comfort food of all ages. All time favourite and one of my favourite vegetarian dish. A comforting yet healthier curry with potato, cauliflower and few basic spice ingredients.

Aloo gobi is a popular vegetarian Indian curry with semi-gravy which can be made in dry form too to savor as a perfect side dish for your meal. This is my version of making potato and cauliflower curry. You will come across different versions of aloo gobi recipe each with slight variations since taste and method varies from people to people.

Aloo Gobi Curry is easy and quick to prepare and taste amazingly delicious. It is a perfect vegetarian main course dish and goes well with roti, any variety of rice, chapathi etc.

Aloo Gobi is a light, bright and colorful curry with tons of flavor from the mix of Indian spices. The spices in the curry can always be adjusted as per your preference making it as hot or mild as you like it.

Amaranth Leaves Stir Fry

Preparation time : 10 minutes
Cooking time : 20 mins
Serves : 3-4

Ingredients :

2 potatoes chopped
2 cups cauliflower florets and leaves
½ tsp Cumin seeds
2 onion sliced
1 green chilly slit
1 tsp ginger garlic paste
1 tomato chopped
½ tsp turmeric powder
1 tbsp Kashmiri red chilly powder
½ tsp kitchen king masala or garam masala powder
3 tbsps coriander leaves chopped
Water as required
2 tbsps oil
Salt to taste

Method :

In a pan heat oil. Add cumin seeds and saute for a min.

Add onion, green chilly, ginger garlic paste and saute till onion turns soft.

Add tomato and saute till it turns soft and mushy.

Add turmeric powder, kashmiri Red Chilly powder and kitchen king masala and saute for a min.

Add potatoes, salt to taste and cook on medium flame for around 10 mins.

Add cauliflower florets and tender leaves, stir and mix well.On medium heat cook for about 5-10 mins.

Add water as required, cover the pan and cook till the potatoes and cauliflower is well cooked.

Adjust the gravy consistency as required and add chopped coriander leaves, give a quick stir and take off the heat.
