Caramel Makhana / Gur Makhane / Caramelized Lotus Seeds

Phool Makhane also known as fox nuts, Euryale ferox, lotus seeds, gorgon nuts is a perennial plant native to Eastern Asia. This plant grows in hot and humid climate and produces edible white starchy seeds. These seeds comes from a flower, and therefore they are called Phool Makhane. It is an extremely healthy and nutritious food. It is a good source of protein, carbohydrates, fiber, magnesium, potassium, phosphorus, iron and zinc. A superfood packed with lots of nutritional value and health benefits.

Lotus seeds or makhanas are often used in quite a few Indian sweets and savouries like kheer, raita, sweet and savouries munchies or curries. Many people in different regions across the country use these seeds to make recipes which can be consumed during vrat or fasting, especially during Navratri.

If you are looking for a quick and easy munchies, then here is an easy and healthy recipe of Makhana which is quick and can be made in jiffy and is super delicious. A healthy munchies for any time of the day or a healthy tea time munchies.

This crunchy Caramelized Lotus Seeds is ready under 15 minutes with handful of ingredients and with minimal efforts. Adding pumpkin seeds and sesame seeds is optional, I have added these seeds to make the munchies more healthier.

This munchies are gluten-free, vegan and low calorie. It is so crunchy and mouth watering that you cant just stop with few of it. I bet you can’t stop eating them. I find them so addicting 😜

Preparation time : 2 minutes
Cooking time : 15 minutes
Serves : 4

Ingredients:
2 cup Makhana
1/4 cup crushed jaggery
2 tbsp Ghee
2 tbsp roasted Pumpkin seeds
2 tbsp roasted sesame seeds

Method :

In a pan add the makhanas and dry roasted over low flame for about 10 mins stirring in between. The makhanas should be crisp and should easily break with crunching sound when you try to crush with your hand. Remove from heat and transfer to a bowl.

In the pan add the ghee. Once the ghee melts add the jaggery and stir well and let it melt over low-medium heat.

Once the jaggery melts completely turn off the heat and add the makhana, pumpkin seeds, sesame seeds and quickly stir them well together till the jaggery is coated well with the makhanas.

Remove from heat and let it cool down and serve or store in airtight container.

Serve as it is as munchies or serve it with tea.
