Green Apple Curry is a Sri Lankan curry recipe. It is a simple, quick and easy recipe. This dish is prepared using green apple, coconut milk and few basic spicies. The sweetness and sourness of apples go so well with the earthy spiciness of the curry powder to create this truly warm and comforting savoury dish. It is a spicy curry with slightly sweet and sour taste.

I have used the Sri Lankan curry powder in making this curry, however if you cannot source it, you can use the curry powder which is available in your local grocery.

What I love about this curry is that, it is an easy and simple preparation yet full of flavour with wild tartness from the green apple. The coconut milk along with the curry powder adds amazing flavour to the dish.

Preparation time : 10 minutes
Cooking time : 20 minutes
Serves : 3

Ingredients:
2 Green Apples
2 tbsp oil
1 tsp mustard seeds
1 medium onion chopped
2 small bay leaves
2 green Chilly chopped
5-6 dried red chilly
1 tbsp Curry Powder
1/4 tsp turmeric powder
1 tsp chilly powder
4 garlic cloves chopped finely
1 tbsp sugar
Salt as per taste
1/4 cup coconut milk
1/2 – 1 cup water

Method:

Wash the apples nicely and pat dry with kitchen towel. Cut them into medium cubes with skin on. No need to remove seeds or the core the apple.

Heat the oil in a pan. When oil is heated add mustard seeds and let it crackle.

Add the onions, bay leaves, green and red dried chilly and saute till onions turns soft.

Add the curry powder, turmeric and chilly powder, mix well and saute for a min.

Add the apples, garlic, salt, sugar and cook on medium high heat for about 10 minutes while gently stirring occasionally coating the apples all over with the spices. The apples will start to soften slightly.

Add the coconut milk and water, stir well, cover the pan and cook for another 5-10 minutes until the apples soften.

Adjust the gravy consistency as per your requirements. Take off the heat and serve with piping hot steam rice.

Please note that the apple should be soft but it should not turn mushy and lost it shape.
