Eggless Hot Milk Suji Cake / Hot Milk Semolina Cake / Rava Cake



Eggless Hot Milk Suji Cake is a very simple and easy cake made with suji/sooji aka semolina. A soft and delicious healthier cake.

Basically we add milk to cakes in room temperature but here in this recipe the milk is added hot which makes the cake soft, spongy and moist.

This semolina cake is super easy to make with just minimum basic ingredients and simple technique. It takes less than 15 mins for the preparation and gets perfectly baked in 35 mins.

Sooji is a good option if you are looking for a healthy cake. One of my favourite semolina cake is Semolina Carrot Cake. Semolina is good not only for baking sweet tea cakes but also for making savoury cakes like Savoury Semolina Cake which is a great healthy breakfast or a healthy anytime snacking.

Preparation time : 15 mins
Baking time : 35 mins
Serves : 6

Ingredients:
1 cup Suji / Sooji / Semolina
⅓ cup Milk
3 tbsp Curd / Yogurt
½ cup Sugar
¼ cup Oil
½ tsp Baking powder
½ tsp Baking Soda
3 tbsp Tutti Fruitti or any candied fruits (optional)

Grease a cake pan and keep aside. Preheat oven at 180° for 10 mins.

In a bowl add the curd and baking soda and mix well till smooth. Keep aside.

Heat the milk but do not bring to boil. Remove from heat.

Add the hot milk in a mixing bowl. Add sugar and suji, stir and mix well. Let it stand for 5-10 mins.

Add the curd mixture, baking powder and oil to the suji milk mixture and fold them gently and incorporate them well.

Dust the tutti fruitti with ½ tsp of flour. Add them to the mixture and fold gently. Garnish with tutti fruitti.

Bake for 30-35 mins. A tooth pick inserted should come out clean.

Remove from oven and let it stand for about 5 mins to cool down and invert.
Let it cool down completely, cut and serve. Enjoy!
