Black Rice Salad is an exotic mix of black rice, tossed shredded chicken and broccoli, crunchy vegetables seasoned with salt and crushed peppercorns. It is a scrumptious dish and makes the perfect healthy lunch or side dish bursting with flavor.

Have you guys ever cooked with black rice before? If you’ve never cooked with black rice before, it has a delicious earthy flavor and contains tons of iron, minerals, vitamins and fiber. It’s also naturally gluten-free and heart-healthy.

It is also much prettier to look at than white rice! Once cooked, it takes on a dark purplish color that is really gorgeous and goes so well in a healthy salad, kheer (pudding) or rice bowl.

This is a very special salad with vibrant colours, flavor and texture. Its exotic, it’s worth it. The salad looks gorgeous, a salad for special occasions 😉.

Preparation time : 15 mins
Cooking time : 25 mins
Serves : 3

Ingredients :
1/2 cup Black rice soaked
1/4 cup shredded chicken (optional)
1/2 cup multi colored bell peppers
1/4 cup broccoli
2 stalk Spring onion chopped (both white and green)
1 Carrot sliced
1/4 cup Cabbage sliced
2 tbsp Olive oil
1/2 tsp cracked peppercorns
Salt as per taste
2 tbsp lemon juice
1/4 cup coriander leaves chopped
Water (used as required only to cook the rice) 1-2 cups

Method :

Bring the water to boil, add the soaked rice and cook till the rice is just cooked keeping in mind not to turn very soft and mushy.

It might take approx 20-25 mins. Cooking time will differ upon the quality of the rice.In a strainer add the rice and let the water drain nicely. Keep aside.

While the rice is cooking, In a pan add little oil and toss the chicken for about 5 mins.

Add the broccoli seasoned with salt and toss for about 5 mins.

In a mixing bowl add the chopped vegetables, rice, chicken and broccoli.

Add the lemon juice, salt to taste, cracked peppercorns, chopped coriander leaves, Olive oil, toss them together well and serve.
