Vegan Coconut Cake with step by step pictures. A super easy vegan coconut cake that is made with coconut milk, coconut oil and fresh grated coconut. Moist, soft, delicous and coconutty.

I have tweaked my old coconut cake recipe (which I will post here soon) and converted it into a vegan coconut cake and I am in love with it. It is now one of my favourite cake.

This vegan coconut cake is a easy and simple recipe. It is a fuss free recipe and the most happy part is it is made of easily available ingredients. It takes few minutes to put things together and voila your delicious vegan coconut cake is ready to be devoured.

It is a super healthy cake. Used whole wheat flour and sweetened with cane sugar. The cake is bursting with coconut flavor. Please have a look at the recipe note for substitution of the ingredients.

Preparation time : 15 mins
Baking time : 35 mins
Serves : 6

Ingredients:

Whole Wheat flour – 1 cup
Fresh Coconut/Dessicated coconut – ¾ cup finely grated
Vinegar – 1 tbsp
Coconut Milk – ¾ cup (180 ml)
Cane Sugar – ½ cup
Coconut Oil – 3 tbsp
Baking powder – ½ tsp
Baking Soda – ½ tsp
Vanilla extract – 1 tsp

Method :

In a mixing bowl add the coconut milk, cane sugar and mix well for few mins till the cane sugar melts completely and becomes creamy.

Add coconut oil, vanilla extract, vinegar and mix well.

Sieve in the flour, baking powder, baking soda and gently fold it to make a smooth batter.

Add the coconut reserving some for garnish and gently fold them.

Grease a cake pan and preheat oven @180° for 10 mins.

Pour the batter into the greased pan and garnish with reserved coconut.

Bake at preheated oven @180° for 35 mins. A toothpick inserted should come out clean. Mine took exactly 35 mins.

Remove from oven, let it stand for 5 mins. Demould it and let it cool down completely, cut and serve.

Notes:

*I have used fresh coconut you can use dessicated coconut whichever you can source.

*Also used cane sugar instead of regular sugar. You can use Jaggery instead or use any other sugar.

*I have directly added the fresh grated coconut, you roast the coconut for about 3-5 mins till it changes its colour.

*You can substitute the coconut oil with any other oil.
