Irish Flatbread also known as Boxty is a flatbread made with cooked mashed potato and raw grated potato and flour. Irish Flatbread is similar to a pancake. You can also add some spices or herbs to the mixture to make it more flavorful just like I did.

Preparation time : 15 mins
Cooking time : 40 mins
Serves : 3-4

Ingredients :

2 large potato peeled and cubed
1 large Potato peeled and grated
½ cup All Purpose Flour / Maida
2 tbsps Rice flour
⅛ tsp Baking powder
Salt to taste
1 tbsp Olive Oil
Pepper to taste
⅛ tsp garlic powder (optional)
Chilly flakes for garnish (optional)
Sesame seeds for garnish (optional)

Method :

In a pot add water and potato cubes and boil till the potato is completely cooked about 10-15 mins.

Drain the potatoes, let it cool down a little bit but not completely cool down and mash the potatoes nicely. Add the grated potato, garlic powder, Olive oil and season with salt and pepper.

Combine the mixture well.

Add in the all purpose flour, rice flour, baking powder and combine the well with the potato mixture and make a smooth dough. Cover the dough and set aside for 10-15 mins.

Divide the dough into 3-4 portions and roll them into a ball.

Place the dough in the greased baking tray and flatten them with your fingers. Sprinkle the sesame seeds and chilly flakes over the bread.

Preheat oven @180° for 10 mins. Bake the bread in the preheated oven for 25 mins.
