Whole Wheat Banana Walnut Cake (Eggless Banana Walnut Cake)

An eggless banana walnut cake made with whole wheat flour, overripe bananas and walnuts. A classic and easy banana cake that takes only 15 minutes for preparation and perfectly baked under 35 minutes. Whole wheat banana walnut cake is tender and ultra moist, you just can’t stop with one slice! This banana walnut cake can be served as a tea cake and also a perfect base to frost with your your favourite frosting.

This is my all-time favourite banana cake recipe with goodness of walnut. I make this often and I dont need any reason to make this cake and savour it. It is so soft, fluffy and moist crumb.

The best way to use overriped banana laying in your kitchen counter is to make this easy wholesome cake. This cake is so versatile, can have it as a tea cake or as a dessert with your favourite frosting or just dizzle of chocolate. It is also a very healthy anytime snacking for kids and also a great option for kids tiffin box.

All of the above recipes are super easy to prepare, ready in no time, and will never disappoint you. I highly recommend you to try them.

To make this cake more healthier I have used whole wheat flour. If you don’t want to use whole wheat flour you can make it with a mix of whole wheat and plain flour or just with plain flour.

Cooking time : 35 mins
Serves : 6-8

☆ Measuring cup used is 240 ml

Ingredients to make banana walnut cake:
1 cup Whole wheat flour
2 Bananas riped
1/2 cup Sugar
1/2 cup Buttermilk
1 tsp Baking powder
1/2 tsp Baking soda
½ tsp Cinnamon powder
1 tsp Vanilla extract
1/4 cup Oil
1/4 cup Walnut chopped
1 Banana for garnish

*If you don’t have buttermilk, do not worry you can easily make at home. Take 1 cup of milk and add 1 tbsp of vinegar or lime juice, stir and keep for few mins and it is ready to use.

Step by step pictorial instructions to make banana walnut cake:

In a mixing bowl add the banana and mash them with fork or you can use electric beater.

In the banana mixture add buttermilk, sugar, oil, vanilla extract and mix well.

In a mixing bowl sieve the flour, baking powder, baking soda, cinnamon powder for twice and mix well.

Add the dry ingredients into the wet ingredients and gently fold to make a smooth batter.

Add the flour coated walnut into the batter and give a quick stir. Do not over mix the batter.

Grease a cake pan with oil and preheat oven @180° C for 10 minutes.

Pour the batter into the greased pan and tap 2-3 times to release the air bubbles inside.

Garnish with chopped walnut and banana slices and bake @180° C for 30-35 minutes or until a toothpick inserted comes out clean.

Remove the cake from oven and let it cool down. Invert and slice after the cake is cooled down completely.

NOTES:

● If you don’t have buttermilk, do not worry you can easily make at home. Take 1 cup of milk and add 1 tbsp of vinegar or lime juice, stir and keep for few mins and it is ready to use.

● You can use all purpose flour or 50-50 ratio of WWF and APF.

● You can use brown sugar or jaggery or cane sugar instead of granulated sugar.

● You can use melted butter instead of oil.

  • 1 cup whole wheat flour (128 gram)
  • 2 large banana overripe
  • ½ cup sugar (100 grams)
  • ½ cup buttermilk (120 ml)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon powder
  • 1 teaspoon vanilla extract or essence
  • ¼ cup oil (60 ml)
  • ¼ cup walnuts
  • 1 large banana sliced for garnish (optional)

Instructions
 

  • In a mixing bowl add the banana and mash them with fork or you can use electric beater.
  • In the banana mixture add buttermilk, sugar, oil, vanilla extract and mix well.
  • In a mixing bowl sieve the flour, baking powder, baking soda, cinnamon powder for twice and mix well.
