Eggless tutti frutti cake is an easy and simple bakery style cake recipe, a popular cake available in Indian bakeries. The cake is speckled with tutti frutti and you can feel it in every bite of the cake (Tutti frutti is candied raw papaya). The cake is soft, light and moist crumb. This Eggless Tutti Frutti Cake is very light and soft with moist crumb. It is made without eggs. I have substituted egg in this recipe with curd/yogurt. You can even use vinegar inplace of curd. Also oil is used to the minimum. You can either use butter instead which gives an awesome texture and taste. I have tried this recipe with both oil and butter and both gives an awesome outcome.

French Vanilla Essence

Ingredients:

Maida flour /All Purpose Flour – 1 cup (128 g)
Tutti Fruitti – ⅓ cup (100 g)
Candied Cherry – 2 tbsp chopped (optional)
Curd / Yogurt – ½ cup (120 g)
Milk – 100 ml cup warm (⅓ cup)
Sugar – ½ cup (100 g)
Oil – ¼ cup (60 ml)
Baking powder – 1 teaspoon
Baking Soda – ¼ teaspoon
Vanilla essence – 1 teaspoon

Method :

In a bowl take the curd and baking soda, mix well and keep aside for 10 minutes.

In a small bowl dust the tutti fruitti and candied cherries with a teaspoon of flour. Keep aside.

Add the sugar and milk to the curd mixture and let the sugar dissolve.

Add in vanilla essence and oil, mix well to combine.

Seive in the flour and baking powder and gently fold it to make a smooth batter.

Add in the tutti fruitti and candied cherries reserving some for garnish and gently fold them. Do not over stir them.

Grease a cake pan and preheat oven @180° C for 10 minutes.

Pour the batter into the greased pan, garnish with reserved tutti fruitti and bake for 30 to 35 minutes. A toothpick inserted should come out clean. Mine took exactly 35 minutes.

Remove from oven, let it stand for 5 minutes. Demould it and let it cool down completely, cut and serve.

NOTES:

● You can use any candied fruits or peels inplace of tutti frutti.
● You can use whole wheat flour or 50-50 ratio of both.
● You can use butter instead of oil.
● You can swap the tutti frutti with mixture of nuts and dry fruits.
● If you want to bake with egg, use two egg and opt out the curd and baking soda.

  • 240 ml measuring cup set
  • Spatula
  • 7 inches rectangle cake tin

Ingredients
  

  • 1 Cup All purpose flour (128 g)
  • Cup Tutti frutti or any candied fruits (100 g)
  • 2 Tablespoon Candied cherry (Optional
  • ½ Cup Curd / Yogurt (120 g)
  • Cup Warm milk (100 ml)
  • ½ Cup Sugar (100 g)
  • ¼ Cup Oil (60 ml)
  • 1 Teaspoon Baking powder
  • ½ Teaspoon Baking soda
  • 1 Teaspoon Vanilla essence (5 ml)

Instructions
 

  • Preheat oven to 180° C for 10 minutes. Grease the pan with oil or butter. Line with parchment paper or simply dust it with little flour.
  • In a bowl take the curd and baking soda, mix well and keep aside for 10 minutes.
    ½ Cup Curd / Yogurt, ½ Teaspoon Baking soda
  • In a small bowl dust the tutti fruitti and candied cherries with a teaspoon of flour. Keep aside.
    ⅓ Cup Tutti frutti or any candied fruits, 2 Tablespoon Candied cherry
  • Add the sugar and milk to the curd mixture and let the sugar dissolve.
    ½ Cup Sugar, ⅓ Cup Warm milk
  • Add in vanilla essence and oil, mix well to combine.
    ¼ Cup Oil, 1 Teaspoon Vanilla essence
  • Seive in the flour and baking powder and gently fold it to make a smooth batter.

    Interesting recipe! A baking beginner, can u help with the below queries

    1) if using egg, will 1 egg be enough for the measure of flour mentioned? And I understand if using egg I need to omit curd/yogurt.
    2) if egg less, can I substitute curd or yogurt with 1 tbsp vinegar?

    1. Hi… you can use 1 or 2 eggs depending upon he sizes of the egg..n yesx for Eggles you can use vinegar or lemon instead of curd..will need to adjust the batter consistency by adding few tbsps extra milk
