Todays recipe Egg Curry is a very easy and simple recipe which I have created in the simplest form with simple basic ingredients which are easily available at your kitchen pantry. It is a simple recipe but very delicious and flavourful. This egg curry can be paired with steamed rice, roti, chappati, parantha, dosas etc.

Egg is one of my favourite and I love egg in any form. Egg is a very versatile and a healthy food which can make numerous delicious lipsmacking dishes and egg curry is one of them and no doubt loved by all ages.

Egg curry recipe has varied versions. Depending upon the regions the recipe varies from one another. And here is one of my version of egg curry. Here I have used pureed onion and tomato to make the curry smooth and thick and flavored with simple basic masala powders. The secret ingredient which made the curry more flavourful and taken the dish to another level is the addition of kasuri methi (dried fenugreek leaves) which made me fall in love with this recipe. I am sure you also gonna love it.

This egg curry is a delicious and wholesome main course recipe to be paired with piping hot steam rice and any Indian flatbread. It is a thick, smooth and flavoursome gravy. In a blender puree the onion and tomato till smooth and keep aside.

Take the boiled egg and make 3-4 cuts. Rub with egg with mixture of salt, turmeric powder and chilly powder.

Heat oil in a pan. Add the eggs and fry till slightly brown on all sides. Remove and keep aside.

In the same oil, simmer the heat and add the onion tomato puree and saute for 2-3 mins.

Add the masala powders, salt, mix well and saute for a min. Add water as required and cook the masala for few mins.

Add the fried eggs, cover the pan and cook for about 5 mins.

Add the Kasuri Methi rubbed in between your palms, mix well and cook for 2-3 mins.

Add chopped coriander leaves, give a quick stir and take off the heat.
